Berries and Oats

For our 25th wedding anniversary we stayed in San Francisco at the St Francis and I had the most incredible cold oatmeal, yogurt and fresh fruit for breakfast. That was 5 years ago and I still salivate just thinking about that muesli mix. This is a combo I can eat every day for breakfast, lunch or an afternoon snack. It is so filling and super easy.  I vary the fruit depending on the season. Since we are in the middle of winter I have switched to frozen berries instead of fresh as the fresh are just too expensive. I have the whole bowl full for breakfast or a light lunch. If making it for a snack I will cut the recipe in half. Don’t have berries? Use an apple, orange, banana, mango, pineapple – you get the idea. I eat this so much I almost named my blog  Berries and Oats.

Berries and Oats

  • 1/2 cup plain non fat yogurt
  • 2-3 tablespoons of unsweetened vanilla almond milk
  • 1/2 cup plain old fashioned oats
  • 1/2 cup frozen cherries slightly thawed
  • 1/2 cup frozen blueberries slightly thawed
  • 1 tablespoon wheat germ
  • 2 walnuts broken into pieces
  • 1 teaspoon shredded coconut
  • a dash (1/8 teaspoon maybe) Stevia or a tsp of Agave Nectar
  • a sprinkle of cinnamon

Grab a cute bowl (it is a lot more fun to eat out of a cute bowl) and start filling it with these simple, nutritious ingredients. If you think about it the night before you can combine the yogurt, oats, sweetener, almond milk and cinnamon and let it sit in the refrigerator over night. It sets up and has a wonderful texture. The next morning add the fruit and other ingredients. Most of the time I am making it fresh right before I intend to eat it and I enjoy it just as much.  WWPs will vary depending on the type of yogurt, fruit and extras you use.
