Continuing with this weeks theme of comfort food I have to include these delicious little chicken bundles. Cream cheese, garlic and herb cheese, onion and herbs de Provence are mixed with diced cooked chicken and baked all bundled up in crescent dough until golden brown. This is a down home winner that makes everyone smile when they come to the table.
It is not the healthiest main dish I make, after-all, it does use white flour dough that comes in a tube! Once in a while that is okay with me and I did lighten up the original recipe by using reduced fat cheese, chicken breast and reduced fat dough. The original recipe was given to me many years ago by the mother of a friend. One day I will try making these with some type of whole wheat dough.
I serve the chicken bundles with garlic mashed potatoes and green beans with lemon and garlic. It sounds like a lot of garlic but both recipes are pretty light on the garlic and the results are flavorful with out being over powering. To top the bundles and potatoes I use one of those Knorr gravy packets and dress it up with a little herbs De Provence and black pepper stirred in after it thickens.
Separate the crescent dough into the eight triangles.
Press the triangle points on the long side together and put the piece of dough between two
sheets of wax paper or plastic wrap sprayed with non stick spray. Roll out into a circle.
Place 1/2 cup of chicken and cheese mixture in center of each circle of dough. Bring dough up around the filling
pressing dough together to create a bundle.
Place on a baking sheet sprayed with non stick spray. Sprinkle tops of the bundles with about a 1/4 tsp
of seasoned bread crumbs.
- 16 ounces cooked chicken
- 4 ounces light cream cheese
- 4 each Laughing Cow Light Garlic & Herb Cheese Wedges
- 1/2 cup chopped yellow onion
- 2 tablespoons skim milk
- 2 teaspoons herbs De Provence
- 8 each crescent rolls reduced fat
- 1/4 teaspoon salt and pepper
- 2 teaspoons Seasoned bread crumbs
Preheat oven to 350.
Combine cream cheese with light laughing cow cheese, onion, milk, salt and pepper, blend until well mixed.
Add chicken and stir to combine,set aside.
Separate crescent roll dough into the 8 triangles. Press each triangle into a round shape and one at a time,
place dough in between two sheets of wax paper or plastic wrap sprayed with non stick spray.
Roll into a circle, the dough will be thin but don’t worry it works.
Place approx 1/2 cup of chicken mixture in center of rolled dough, bring dough up around the filling pressing dough together to create a bundle.
Place on a baking sheet sprayed with non stick spray.
Spray tops of bundles with olive oil cooking spray, sprinkle 1/4 tsp of seasoned bread crumbs over the tops.
Bake for 30 minutes or until golden brown. Serves: 8 Serving Size: 1 bundle
