I hope everyone had a lovely Mother’s Day. I sure enjoyed my day. I don’t live close to my mom but I will get to see her this summer when we go visit for a few days. She is a warm, loving, caring, strong woman whom I greatly admire. This photo was taken last summer when we visited my parents in Nebraska.

Here I am with my daughter Katy yesterday. David didn’t get up until right before we ate lunch and I some how missed getting a photo with him. These two photos do show my difference in size, I am getting smaller!

Here is a photo of Katy and David when we were up in the mountains last fall and it was just starting to snow. Those are little snow flakes in Katy’s hair.

We came home after church and made a wonderful lunch. Hubby Tom grilled up his fabulous chicken on the bar-b-que grill. He seasons chicken breasts, thighs and drumsticks with Cavenders’ Greek Seasoning and slow cooks it on the Weber grill to perfection! We always have him cook a large amount and then we freeze it for future meals. Here is a peek at our feast.

Oven roasted asparagus, easy but so delicious!

Pot luck potato casserole, a family favorite. It makes enough to feed an army! I have posted about it before but it bares repeating with the picnic and bar-b-que season coming.
POTLUCK POTATO CASSEROLE
1 1/2 cups fat-free sour cream
1 1/4 cups (5 ounces) finely shredded reduced-fat sharp cheddar cheese
1/2 cup fat-free, less-sodium chicken broth
1/2 cup minced fresh onion
5 teaspoons butter, melted
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
1/8 teaspoon ground red pepper
1 (30-ounce) package frozen hash browns, thawed (such as Ore-Ida)
1 (10.75-ounce) can reduced-fat cream of chicken soup (such as Campbell’s Healthy Request)
Cooking spray
1 cup coarsely crushed cornflakes
Preheat oven to 350°.
Combine first 10 ingredients in a large bowl; spread evenly into a 13 x 9-inch baking dish coated with cooking spray. Sprinkle cornflakes over potato mixture.
Bake at 350° for 1 hour or until bubbly.
Yield: 10 servings

Honey Chipotle Baked Beans are a must for bar-b-que season. You start with canned beans and dress them up. You won’t believe the depth of flavor and they will soon become your favorite side dish!

Honey-Chipotle Baked Beans

Yield: 8 servings (serving size: 3/4 cup)

Cooking spray
1/2 cup minced shallots (about 5 ounces) or use some mild red onion
1 tablespoon ground cumin
1 tablespoon minced garlic
1/2 cup tomato puree
1 tablespoon canola oil
1/4 cup honey
1/4 cup cider vinegar
2 tablespoons molasses
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
2 chipotle chiles, canned in adobo sauce, seeded and chopped
2 (28-ounce) cans baked beans
Preheat oven to 300°.
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add shallots; sauté 4 minutes or until golden. Add cumin and garlic; sauté for 1 minute. Add tomato puree and oil, and cook for 2 minutes or until thick, stirring constantly. Add honey and the next 5 ingredients (through chiles). Reduce heat; simmer for 10 minutes, stirring occasionally.
Combine beans and shallot mixture in a 2-quart baking dish. Bake at 300° for 1 hour or until thick and bubbly.

For dessert I didn’t have time to make anything from scratch but I had this frozen dessert from Trader Joes that I had on hand just for an occasion such as this. I cut it into 8 servings to keep the calories in check with my food plan. It also comes in raspberry and we decided we like the raspberry better than the blueberry. This is very sweet!

I know everyone doesn’t have a Trader Joes where they live but you should check out some frozen items in the regular grocery store. If you cut the portions down some items can be worked into your food plan.

I cut this into 8 instead of 4 servings.

Katy and I are off to the mall this morning to shop for a few things I need for my trip later this week. More about that later!

Beautiful pictures of you and your family! Your daughter is gorgeous like you! That’s great that you got BareMinerals makeup for Mother’s Day! What a treat! You’ll be absolutely addicted to it. I adore it and got my mum hooked on it as well. It’s probably the easiest makeup to put on and make look good. If you didn’t get mineral veil you might want to pick that up. You put it all over your face (after your makeup is on) and it’ll give you a radiant glow and it’s perfect for summer. Have fun with the makeup!!! Those potatoes look absolutely amazing! I think that I might have to make them.

What a lovely family you have. Your Mother’s Day meal sounds and looks delicious. I make that same casserole – with low fat sour cream (mostly because I refuse to do anything fat free) and with bread crumbs instead of corn flakes. It’s a family favorite!
