Mexican Shredded Pork Tacos – Slow Cooker / Crock Pot

  • 2 pounds boneless pork chops, trimmed of fat
  • 6-8 garlic cloves, minced
  • 2 Bay leaves
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon Adobo seasoning or to taste
  • 1 cup Salsa
  • 1/2 cup water

Spray crock pot insert with nonstick spray. Add all of the ingredients and cook on high for 4-5 hours (or low for 8 hours) or until tender. Check after about 3 hours to see if you need to add more water, I added another 1/4 cup water at this point. When the pork is tender, remove the bay leaves, remove the pork to a plate and using two forks, shred the pork. Place it back in the crock pot and stir into the juices. Serve with your favorite tortillas and taco toppings.
