Gorgonzola Fruit Torta

This torte makes a beautiful presentation and is a delight to eat. It is a blend of light cream cheese and flavor packed Gorgonzola cheese with dried apricots, cranberries and green onions layered in a dish and chilled. It is easy to transport in the car when going to a party. If you are going a distance pop it into a cooler and wait until you get to your destination to turn it out on a plate and garnish!



Gorgonzola Fruit Torta

  • 16 ounces  reduced fat cream cheese — softened
  • 2 tablespoons butter (I have not tried light butter but I think it would work fine)
  • 4 ounces Gorgonzola cheese — crumbled
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries
  • 1/4 cup green onion — chopped
  • 1/4 cup parsley (if I have it on hand, if not don’t worry, it just adds color)
  • 1/2 cup dried apricots — chopped
  • 1/4 cup slivered almonds — toasted

Cut up cream cheese and butter. Place in a food processor with Gorgonzola and salt and mix until smooth.

Line an 8″ x4″ loaf pan with foil ( I use plastic wrap), or a small round casserole like a Corning Ware grab-it. Spray with cooking spray. Layer the following ingredients in order:

  • Cranberries
  • 1/3 cream cheese mixture
  • green onion and parsley
  • 1/3 cream cheese mixture
  • apricots
  • 1/3 cream cheese mixture

Use a small spatula sprayed with cooking spray to spread cream cheese mixture easily over other ingredients without mixing. Cover and chill until firm. Turn uncovered pan upside down on a serving plate and remove foil very gently. Top torta with slivered almonds. This can be made ahead of time and wrapped well with foil and placed in the freezer. Just thaw out in the refrigerator prior to serving. It looks elegant! Put it on a pretty plate or platter with a cheese knife and a selection of whole grain crackers, pita bread, apple slices and some celery sticks.                                         S
