Weekend Recap / Food Find Taquitos and Spring Rolls

WEEKEND RECAP

It was a pretty quite weekend here. On Saturday we went and looked at upright freezers. Ours is somewhere around 25 years old and it isn’t working so great anymore. Last weekend we defrosted it and already in one week it is starting to ice up again. Not a good sign. We are waiting for freezers to go on sale (the clerk tipped us off) and we have a replacement picked out so the hard part is already done! Saturday night we stayed in, made simple sandwiches for dinner and watched a movie. I still wasn’t feeling well so we turned in early and read books. Well I only read for about 10 minutes before falling asleep!

Sunday was church and then we had lunch out at Boudin Bakery. I got my favorite butternut squash soup and half of a turkey and cranberry sandwich. Delicious! I really need to find a recipe to make my own squash soup as I absolutely love it. I like most soups and I will soon be making lots of them in my crock pots.

PRODUCT REVIEWS

I cook a lot and maybe more than a lot of people do anymore. Even so I still like to have some frozen prepared things on hand when it is just me to fend for and let’s face it sometimes it is nice to have a break from cooking! I know not everyone has a Whole Foods or a Trader Joe’s nearby. I encourage you to check out the health food section at your grocery store or your local health food stores and find yourself some new items to have in the freezer or pantry to pull out when you don’t want to cook.

These Taquitos come from Whole Foods and I love them. I do make my own taquitos sometimes but when I don’t have them in the freezer these are a nice substitute. I just realized I should blog about my home made ones. Stay tuned for that one!

I like to heat them up in the oven to make them crispier and then cut them up and serve over salad greens. This makes for an easy taco salad!

Well let’s just go international with the foods and switch to Asian cuisine. Yes I can and have made egg rolls but they are so much work! I once helped make 500 egg rolls for a fund raising project for band boosters! I could roll them in my sleep after that little project.

There are some good frozen egg rolls and spring rolls available. At Costco they sell the Ling Ling brand and they are really good. I recently took them to a friends house for the appetizer and they were a big hit. Of course they come in a huge box. If you only need a small quantity these spring rolls from Trader Joe’s are perfect. They bake up nice and crisp. the flavor is indeed delightful just as it says on the box.

Last week one night for dinner I made my chicken fried rice and these spring rolls. Son David took left over chicken fried rice in a thermos for lunch a couple days as well. It makes a ton and reheats perfectly. Click here for the recipe. Katy was looking for all of the ingredients in Spain so she could make the fried rice for her and her roommate. It is so flavorful and filling!

I am feeling better and thank you for all of the well wishes! I still have this nagging cough going on but it is getting better.Today is going to be a day of catching up for me. I have a list of chores that didn’t get done last week so I will do my weight work out and get busy in the house!

I think I will skip my walk as it is super windy outside here this morning and I think the aerobic activity will just aggravate my cough. Cleaning and going up and down the stairs does burn calories. Another blogger posted about how many calories household chores burn and it was actually quite impressive!

    Those taquitos look great! My son eats some from Costco but I know the nutritional info was not as good for those. I love soup. Not sure my favorite but the first one that comes to mind is Taco Soup.

    I have a butternut squash recipe for you! I love it, and actually plan to make a version adding apple to the soup for a sweet and savory soup.

    I do think the goat cheese crostini made the soup though.

    But alltime favorite soup, if no calories were considered, is beer cheese soup with pretzel croutons. I had it at a bar in Wisconsin many years ago, and it was amazing!

    I’ve never met a warm soup that I didn’t like. Not too fond of cold soups even in the summertime! My favorite is Panera Bread’s Chicken and Wild Rice. Sure wish I could duplicate it at home.

    Thanks for these great reviews. I’ve never tried taquitos, but I know we’d love them. And the TJoe’s spring rools look great too. I might just get some for tonight’s dinner and do fried rice as well.

    I think the Roasted Zucchini Soup that I made last week is going to be one of my favorites. The other two that I make a lot are Tortilla Soup and Italian Sausage Soup. It’s fast getting to be the time of year when I make some sort of soup every weekend!

    My favorite soup is definitely baked potato with bacon and cheese garnish!

    Any soup that I don’t have to make myself is my favorite; I’m not picky, except I avoid creamy (fat-creamy) soups. Would rather chew calories than slurp from a spoon.

    I was lucky that the cold I just got over did not have a coughing phase. That’s the worst! Feel better!

    Those taquitos look so good & great idea having them with a salad. We can buy some{beef} at Costco too but they are not that healthy!

    My favorite soup is Beef Barley and some of the homemade cream soups like carrot.I usually have a couple of kinds of soup in the freezer.

    I fell in love with taco soup last year, and I’m looking forward to having lots of it this winter as well. If I make a vegetarian version, I could pair it with some homemade taquitos if someone kindly shares her recipe with us!
