Superfast Salisbury Steak / Weight Watchers PointsPlus 7

Yesterday I decided it was time to make another beef meal for hubby Tom! I can only feed that man so many chicken meals in a row. Son David on the other  hand could eat chicken everyday and be perfectly happy. I didn’t think David would eat the salisbury steaks so I made him mini meatloaves with the left over half pound of ground beef from this recipe just cutting the recipe in half. Needless to say, heading into the weekend we have lots of leftovers for those easy heat and eat meals!

The original recipe for these Superfast Salisbury Steaks calls for combining half ground turkey breast and half lean ground beef. I made them that way the first time I tried this recipe and we didn’t like the flavor of the combined meat. We did think the sauce was quite tasty so the next time I made them with all lean ground beef and the flavor was much improved! For this recipe I used the lean ground beef chubs from Costco that are 9% fat. That is what I calculated the nutritional information from, so if you use meat with a different fat content adjust the nutritional information accordingly.

This recipe goes together pretty quickly, be sure to simmer the sauce long enough to reduce it down so it becomes thicker. If you have some mushrooms toss those in as well. The sauce makes a nice gravy for mashed potatoes but polenta, brown rice or couscous would also make for a nice side dish. This is one of those comfort meals, perfect for the stormy day we had here yesterday.

Superfast Salisbury Steak

  • 1 1/2 pounds ground beef 9% fat
  • 1/3 cup dry breadcrumbs Progresso Italian Style
  • 2 large egg whites
  • 3/4 cup finely chopped onion
  • 2 garlic cloves,minced
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
For the sauce:
  • 3/4 cup water
  • 3 tablespoons tomato paste
  • 2 tablespoons Madeira wine or dry sherry
  • 1 1/2 teaspoons Worcestershire sauce
  • 1/4 teaspoon freshly ground black pepper
  • 1 (10 1/2-ounce) can condensed French onion soup (such as Campbell’s)
  1. Combine first 6 ingredients plus salt and pepper to taste.
  2. Divide meat mixture into 6 equal portions, shaping each into a 1/2-inch-thick patty.
  3. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  4. Add patties; cook 6 minutes or until browned, turning after 3 minutes.
  5. Remove patties from pan; keep warm.
  6. Stir in water and remaining ingredients. Bring to a boil; add patties.
  7. Cover, reduce heat, and simmer 10 minutes.
  8. Uncover and cook until wine mixture is reduced to 3/4 cup (about 10 – 15 minutes).
Yield:  6 servings (serving size: 1 patty and 2 tablespoons sauce)

NUTMEG NOTES

The stormy weather here yesterday did make me want some comfort food but at the same time I was craving a cold green smoothie! I don’t usually want the green smoothies when the weather is cold but I think the extra chocolate and sugary treats this week were overload and my body was saying feed me more greens! I made my fruit and veggie smoothies twice yesterday and they were amazing.

It made me think of Spring and Summer and all of the fresh fruits and vegetables I am looking forward to eating again. Fresh tomatoes from the Farmer’s Market, watermelon, juicy strawberries, blueberries and corn on the cob! Planting flowers, yard work, long walks outside and bar – b -que’s! Capri pants, sandals and summer dresses!

Day dreaming of Spring and Summer and all the good things that come with it.

    Biking outside! Woo hoo:)

    The only time I have eaten salisbury steak is in the dining hall in college. Ugh. Your sounds good though. My dear husband wants to eat less red meat and I am the one who can only handle chicken so many meals in a row! The teen would eat more meat.

    What I’m NOT looking forward to: Pollen, Snakes, Bears and thunderstorms with tornado watches/warnings. Did I say pollen?? LOL!

    I remember as a youth, all the TV dinners were salisbury steak!

    Sounds very tempting. I love beef meals but I also love chicken. Don’t have the beef as often because I feel I am paying for it the rest of the day in points! Guess that is kind of how the WW is designed this time around.

    I am looking forward to Spring so I can get out walking again….our street is no longer a skating rink so I might get out soon!
    Summer I’m not so much a fan because it gets so hot here, but it is better than snow, wind & ice!!

      We are already getting nice tasting strawberries here in Northern CA. I made the chocolate dipped strawberries and they were amazing!
