Hubby Tom had mentioned a couple days ago that chili sounded good to him and yesterday it sounded good to me too. The slow cooker / crock pot is perfect for making chili, that slow cooking allows all of the flavors to develop and once you put that lid on, your work is done! I love that.
Everyone has their favorite chili recipe but even so I decided I would share mine. Sometimes it’s nice to try something new and different, you never know it might become your new favorite!
Of course remember that recipes are just a starting point. Use the ingredients you have on hand. If you don’t have the Rotel tomatoes, use canned diced tomatoes and add a can of chopped green chilies. No kidney beans in the pantry? no problem use all black beans or pinto beans. If you prefer ground turkey in place of the ground beef go for it. I didn’t have a green bell pepper so I used the red pepper I had and it worked just fine.
The spicy chili was perfect! The nice thing about recipes like this is,they are even better the second day!
Beef and Bean Chili – Slow Cooker
- 1 pound beef ground, very lean, 95% lean
- 2 onions, whole — diced
- 4 cloves garlic
- 1 green pepper — diced
- 28 ounces crushed tomatoes
- 8 ounces tomato sauce
- 2 cans Rotel tomatoes with green chiles (or use 2 cans diced tomatoes and 1 can chopped green chiles)
- 14 ounces tomatoes, canned
- 2 small cans canned red kidney beans — drained
- 1 small can canned black beans — drained
- 2 cups low sodium beef broth
- 4 tablespoons chili powder — or to taste
- 1 tablespoon ground cumin — or to taste
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground coriander
- 1 teaspoon ground mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon hot sauce — I like Chipotle Cholua — or to taste
Saute ground beef with onion, garlic and green pepper until beef is no longer pink and vegetables are cooked.
In crock of slow cooker add all of the ingredients, stir, cover and let cook on high for 3-4 hours or on low for 6
-8 hours. This recipe freezes well!
Serving Ideas:
Put 1/2 cup of cooked rice in the bottom of the bowl before putting a ladle of chili on top. Top with cilantro, shredded cheese, light sour cream or diced avocado. Good Eats!
Great over an Uncured Applegate Farms hot dog on a whole grain bun for a chili dog.

I have been having so many problems with the server for this blog. Things load incredibly slowly which means it takes forever to load photos, change content and get a post to the point I can hit publish! It is very frustrating to say the least.
Son David (the computer science major) is helping me to move to a new server. Yippee! In the process he is helping me to change a few things as well. We are working on reorganizing the recipes to make them easier to find. That is something I have wanted to do since the beginning. I knew right away after just a few posts in the beginning that I wanted to be able to separate the recipes and make it easier to search and browse them. I even thought about having two blogs, one for recipes only and one for my ramblings. Hopefully we have come up with a solution that incorporates both into one blog.
These changes require some work. Son David is giving me “homework” and behind the scenes here at Nutmeg Notebook I am working hard to meet my deadlines! This also means that I don’t have time to get around and read other blogs right now. I hate not knowing what is going on in the blog sphere and reading about all of your weight loss success stories. Hang in there with me and soon things will be back to normal and Nutmeg Notebook will have some improvements that we can all enjoy!

Hi Tami! We’ll be patient while you’re working on your server situation.
I sort of like chili..I’m a coward and not fond of heat in my chili so I make my mom’s recipe..I call it Chili for Cowards!I use less ground beef and more beans.
I have made Wendy’s chili clone and like the flavor.
I have 3 crock pots and manage to use all 3! The smallest is a perfect size for just the two of us.

OMG, I have such problems too – with “scripts” running, even when I haven’t cut and pasted anything. If I say “stop script” it will erase everything I’ve already posted, and if I say “continue” to keep the script running, my computer freezes up.
So here’s how I’ve been posting the last week – write a paragraph, download a picture, walk away and make a pot of coffee, hit “continue” then write another paragraph and download another photo, then jump in the shower.
What should take about 20 minutes to post now takes me about an hour – so frustrating – at least I get other stuff done in the meantime so I can still leave for work on time!

Biz that is kind of how things have been going for me too! It took me 3 hours to get a post up one day! Sigh!
I will still be using WordPress but I am self hosted so I am changing the server provider. Hopefully things will runner quicker and easier for me once we get it moved.

I love the slow cooker and I need to think about using it in the summer to keep my kitchen cool. I always think of it for stews and more winter type meals.
My newest slow cooker runs so hot and cooks everything super fast.

I’m from Texas – never met a chili that I didn’t like. True Texas chili isn’t supposed to have beans, but that’s what I grew up eating and cooking. (As long as the beans were not white beans – go figure.) Now on a carb-restricted diet, I add very few, if any, beans. I always use ground beef and usually some mild Italian sausage. Ground turkey works for me, too. We have gone with high-price cuts of beef, not worth it.
We have a slow cooker but never tried chili in it. How embarrassing…

I love what you wrote “I’m from Texas – never met a chili that I didn’t like” that cracked me up! I did low carb years ago and I bought canned soybeans to make chili with and we really liked them. I found them at Whole Foods and health food stores.
Maybe you will get your slow cooker out and make some chili!

I hear more ppl complaining about problems with wordpress…IDK…I had a hard time deciding whether to go with bogger or wordpress when I started my blog up last year, and although wordpress allows you to do a few really nice things, I have had no problems ( knock on wood ) with blogger.
You can add me to the list of ppl with three crockpots! 2 bigger ones and one small one for sauces and gravies. I am going to use my two bigger ones tomorrow for corned beef and cabbage.
Beans…definitely WITH beans!

Hi Renee it isn’t wordpress that is causing me problems right now it is my hosting provider. I have been getting along pretty well with wordpress lately.
Using the smaller slow cooker for gravy and sauces is a brilliant idea! I learn so much from the blog and the comments here! Thanks for sharing that.

I like chili any way I can get it! Like Jan said, here in Texas you’ll often find chili with no beans, but not at my house. I love beans and will always add them to chili when I’m cooking it. I recently found myself in posession of a LARGE quantity of venison and am having fun trying out new recipes with it. My current favorite is a Bobby Flay chili recipe out of his Mesa Grill book.

LOVE chili! Ground beef with beans. I am always looking for a good recipe for it. I’ll try this one soon, before it warms up too much and I don’t feel like chili anymore:)

Tami, it’s still fairly cold outside and a hot bowl of chili would be just perfect for dinner. I love chili and I love beans so I like my chili both with and without beans. I should try your recipe soon, before it gets too hot.

For me beans are a must and I prefer ground beef although I’ve had it both ways. I have a crock pot and I love it, esp in the winter.

I have a slow cooker, but I don’t use it very often. I made a few things that didn’t turn out so great, and I guess I got discouraged… Have to give it another try!
