Easy Chinese Chicken Salad For One

I used Trader Joe’s Asian Style Spicy Peanut Vinaigrette, the preshredded coleslaw mix and leftover chicken breast that I chopped. A few toasted sesame seeds, sliced almonds and green onions and my dinner was ready in minutes. It was fantastic! When I toast sesame seeds or nuts I do a larger amount than needed and then freeze them so the next time I need them the toasting has already been done – it’s such a time saver.

Easy Chinese Chicken Salad For One

  • 3 ounces cooked, diced chicken breast
  • 1/3 of a small bag of coleslaw mix (I didn’t measure, just dumped it out)
  • 1/4 teaspoon toasted sesame seeds
  • 1 tablespoon sliced green onions
  • A sprinkle of toasted almonds
  • 2 Tablespoons TJ’s Asian Style Spicy Peanut Vinaigrette

Mix everything together and enjoy!

Nutritional Values will vary depending on amounts of chicken, dressing, seeds and nuts.

I am loving your longaberger dishes, Tami. Have a few myself…not the dishes but the serving pieces and of course…the baskets! lol

I MUST get that dressing from TJ”s!
