Baked Chicken Taquitos

With this easy baked version of Taquitos you get all the crispy, crunchy corn tortilla with out all the fat! This recipe uses cooked chicken so if you have some left over grilled, poached or roasted chicken it goes together quickly. Serve with your favorite salsa and some light sour cream. These can be a main dish, appetizer or a side dish. I like to cut two of them into chunks and serve over a bed of lettuce for a quick taco salad. Ole!

Baked Chicken Taquitos

  • 6 ounces cooked chicken breast– diced
  • 3 ounces Cabot reduced fat sharp cheddar cheese — shredded
  • 1 cup canned black beans — drained
  • 4 ounces – canned green chiles
  • 1/2 teaspoon cumin powder
  • 16 each Mission corn tortillas –  extra thin
  • Non stick cooking spray

Preheat oven to 400, spray a rimmed baking sheet with non stick spray. In bowl of food processor add cooked, diced chicken, drained black beans, green chiles, cheese and cumin powder. Pulse 10-12 times or until mixture is well combined, don’t over process as you don’t want it to turn to paste.

Place corn tortillas two at a time between two damp paper towels and microwave for 20 seconds. Place about two tablespoons of chicken mixture on each tortillas and roll up tightly. Place seam side down on prepared baking sheet. Spray with nonstick spray. Repeat with remaining tortillas and filling.

Bake for 6 minutes, turn over and bake another 6 minutes or until crisp and light golden brown. Baking time will vary depending on your oven so watch them closely. When I placed a baking sheet on the lowest oven rack the taquitos browned up much quicker as it was closer to the heating element.

    Made these last night and will have them for lunch today. They were wonderful and came together really fast. I had to up the points value because I couldn’t find extra thin tortillas, but still a very doable point wise lunch and/or dinner.

    Mine didn’t roll up as nicely, maybe because the tortillas were too thick? Will definitely try again if I can find the extra thin ones.

      Not all stores n my area carry the extra thin tortillas. I few of mine split during the baking process and I don’t know why. Glad you liked them. I should make them again as we really enjoyed them!
