Vanilla Frozen Yogurt & Grocery Card Winners!

The ice cream maker has been humming at my house! Last week I made the Strawberry Coconut ice cream that was a big hit. This week I tried making vanilla frozen yogurt and it was also a success! There was an old post on 101 cookbooks blog that I took inspiration from. She used a recipe out of David Lebovitz’s “The Perfect Scoop.”

I made some adjustments of my own using part fat free Greek yogurt and part 2% to keep the calories and fat low but still have the creamy goodness and mouth feel of a decadent frozen yogurt. The Greek yogurt was so thick that I ended up adding a little skim milk to thin it out a bit. This recipe only took about 15 minutes in the ice cream maker to freeze – talk about fast. The results are amazing! Hubby Tom and daughter Katy are loving it as much as I do.

I went with a smaller amount of sugar which created a slightly tart frozen yogurt which we really like. If you have more of a sweet tooth go with the full amount of sugar. When you make it at home you have control of how sweet it is! Each serving is a generous half cup. Eat it alone or with some fresh berries. Incredible! I think some fresh fruit could be added to this basic recipe and I will experiment with that after my vacation.

Vanilla Frozen Yogurt

  • 1 cup 2% Greek Yogurt (I used Fage brand)
  • 2 cups fat free Greek Yogurt
  • 1/2 cup skim milk
  • 2/3 -3/4 cup Organic Sucanat – an Organic free flowing brown sugar, or use white sugar, I used 2/3 cup
  • 1 teaspoon vanilla extract

In a medium size bowl combine all ingredients together. Stir until sugar mostly dissolves. The sucanat will continue to dissolve in the ice cream freezer.

Pour into your ice cream freezer and freeze according to the manufacturer’s instructions.

Yield: 8 servings Serving Size: 1/2 cup

Nutritional Information calculated using 2/3 cup sugar which results in a slightly tart frozen yogurt. If you have a sweet tooth, use more sugar.

Per Serving: 119 Calories; 1g Fat (4.6% calories from fat); 8g Protein; 20g Carbohydrate; 0g Dietary Fiber; 2mg Cholesterol; 39mg Sodium.  WWPP 3

Nutmeg Notes

Tomorrow Hubby Tom and I are going over to the West coast for a few days of hiking and hopefully a little R & R as well! I will take the lap top but I don’t have plans to post and I don’t even know if we will have Internet. Hubby Tom has trail maps ready and outdoor adventures planned for us! It will be about 30 degrees cooler over on the coast – perfect timing! We went to REI and got new hiking shoes for me and hiking boots for him. This is my first pair of Keen hiking shoes. They are so comfortable and don’t need any break in time. I wore them yesterday with my new wool socks and my feet were comfy all day! I am thinking after all the hiking I just might deserve a relaxing pedicure and manicure! Hubby Tom are you reading this? Is there a day of pampering on the schedule? 🙂

This hat has built in UV protection-how cool is that? I love shopping at REI, they have the most amazing outdoor clothes and gear. The staff are well trained and so helpful too.

I love to go on day hikes in the cool of the morning. There is something so relaxing about being out in nature.

REI is my favorite place to shop for outdoor gear. They have awesome shoes, clothes, maps and everything you need.

    So whenever we travel to a city with an REI, my husband has to go! He went when he was in LA last month with my teen for college orientation. He went when we were in Minnesota last summer. And every time we go to Colorado. He LOVES that place! I like it okay, but get rather bored with the time he spends there.

      Karen what kind of shop or store suits your fancy? My hubby loves a good hardware store and can spend tons of time just looking around at all the hardware and seeing what is available. Once I get through the garden or kitchen stuff I am done! I guess that is equal to me browsing in a kitchen supply store so we patiently let each other browse to hearts content. 🙂

    I’d rather hike than eat! LOL! I believe it’s the ONLY thing I’d rather do than eat. Am jealous of your adventure and can’t wait to hear about your hiking. It is horribly hot here in TN, so the mention of 30 degrees cooler makes me remember those long ago cool days in Colorado! Have a great time!

    My favorite ice cream is anything that combines cherries, chocolate & nuts!!

    And REI is a store which I’ve been forbidden to enter alone! Any outdoor store or bookstore are dangerous for me. I tend to spend the grocery money!

      Sharon we have triple digit weather and it’s awful so I am really looking forward to mild temperatures.

    Hi Tami – The frozen yogurt looks great. I love that you take the time to make such great dishes, and keep them healthy and nutritious in the process!

    You will love the Keen hiking shoes – I’ve had several pairs and they are unbelievably comfortable. The trip sounds great and the cool weather heavenly! You might have to do some high class snuggling at night with those chilly temps! Have a wonderful time.

    I’ve never been to REI, but if I ever go to a city that has one and I have time, I’ll definitely stop in for some window shopping! I don’t do much actual shopping these days, but it doesn’t cost anything to look!

    Hope your hiking was fun! fun! fun! I love the Keen shoes. I’ve got hiking boots I have worn a bunch. Also bought some Keen sandals that I used for walking all over Italy this summer–they are very comfortable!
    Wish we lived closer to each other so we could hike together!
