Sweet Potato Mash

I knew a plain old sweet potato would taste good but I also needed some protein and some way to make the sweet potato easier to swallow. Cottage cheese seemed like a good match so I tossed them both in the Blendtec blender for a little spin with a touch of salt and pepper. Then I heated it up in the microwave.

I will be making this again and again because it was super filling, loaded with protein, took a while to eat and was easy on the calories. It was a huge bowl of yum!

Sweet Potato Mash

  • 7  ounces  sweet potatoes, cooked, peeled
  • 1/2  cup  cottage cheese, lowfat
  • salt and freshly ground black pepper to taste

Put ingredients in a Blendtec blender or food processor and process until smooth. Heat up in the microwave. Enjoy!

Yield: 1 serving

    Shoot. I forgot to buy sweet potatoes at the grocery yesterday! I knew I was forgetting something, but I hadn’t realized that until this post. Oh well, it’s a nice day today. I’ll just have to walk back down there and get some sweet potatoes this afternoon. 🙂
