In the fall while staying in San Francisco I had the best Oatmeal Brulee for breakfast at the Park 55 hotel. I have attempted to recreate it at home trying many different combinations. All attempts were tasty but this final version is my favorite! This is not your everyday oatmeal my friends — oh no–it’s over the top special!
The oats are cooked with slices of banana, strawberries and blackberries (or blueberries) and then topped off with a little caramelized sugar coating! What’s not to like about that I ask you?
If you have a kitchen butane torch you can use it to caramelize the sugar coating on top. Just to let you know I have also made the oatmeal without the caramelized sugar on top and loved it that way too. The warmed up banana and berries are bursting with flavor and make the oatmeal extra special, very creamy and you end up with a huge bowl of warm comfort for breakfast. It keeps me full for hours!
The kitchewn torches are available at stores that sell kitchen supplies. No torch? No problem you can use your broiler but be sure the dish you are using is safe to use under a broiler! None of my bowls are broiler safe.
Creamy Oatmeal Brulee
-
1/2 cup quick cooking oats
-
1/2 cup water
-
1/2 cup Unsweetened Vanilla Almond Milk – Almond Breeze — or your choice of milk
-
1/2 banana–sliced
-
1/2 cup fresh strawberries–sliced
-
1/2 cup blackberries–or blueberries–fresh or frozen
-
1/4 teaspoon cinnamon or to taste
-
dash of freshly grated nutmeg
-
sweetener of choice for the oatmeal mixture–if desired
-
1 teaspoon sugar–reserved for topping
In a microwave safe bowl combine oatmeal, milk, banana, berries, cinnamon, nutmeg and sweetener if using, stir to combine. Microwave for 2 1/2 – 3 minutes or until desired consistency. Sprinkle sugar over the top and using a kitchen brulee torch caramelize the sugar. If you don’t have a kitchen torch you can accomplish the same thing under the broiler if you have a broiler safe dish.

This was we got at the Farmer’s Market this week. No Sunflower greens this week so we got Pea Shoots instead and they are sweet and crunchy perfect for adding to salads. The strawberries were very fragrant, in fact we could smell them as we approached the market area. The tomatoes are late season and this might be the end of them. On the right are more of those fantastic watermelon radishes.
For dinner the other night we resurrected an old recipe for Quick Chicken Cordon Bleu. I posted about it when I first started blogging so you might have missed it. I had to laugh at the photo I took back then and I am going to update it with this new one. Katy said this meal was fit for a king! I agree. Do yourself a favor and get the ingredients to make it this weekend and enjoy a restaurant quality meal at home. I taught Katy how to prep and prepare the fresh artichokes we found at Costco. They are a lot of work but also really fun to eat. Lately we have been getting organic sweet potatoes from Whole Foods and they are so creamy, moist and sweet that they don’t need anything added to them. I love that!
Nutmeg Notes
So many of you have already taken advantage of my new blog email subscription! We had a little snafu at the start and some of you early birds may have received emails when I was doing some recipe organizing. There was a setting that needed to be changed so that wouldn’t happen and David has taken care of it. Ha ha! If you click on the little letter icon in the subscription box and fill out the required information every time I put up a new post you will get an email letting you know.
I am on high tech overload here! Seriously my brain is working overtime right now as I learn how to use a new laptop with a new windows system ( I had Vista on my old one), a new cell phone, Ipad2 and we just installed a new recipe software program that I need to learn how to use. It takes me forever to accomplish anything right now on these devices.
They say it’s healthy for the brain when we learn something new — if so my brain should be getting healthier by the minute. I know that in the long run it will make life easier but right now it makes me feel old and slow! Ha ha!
Hubby Tom and I played iPad Scrabble the other night. It was so much fun and I won!
Have a healthy day!

I have been putting overnight oats in the fridge the night before, so I can grab breakfast and walk out the door. BUT, this recipe seems relatively quick. I will have to give it a try.

That oatmeal looks delicious! I’ve always had an irrational fear of kitchen torches- I’m scared that I’ll blow something up if I use one.
Maybe it’s time to get over that and try this out.

Hi Greta I agree that the torches are a little intimidating but after the first use you realize it’s not so scary.
Thanks for stopping by my blog!

Love oatmeal and will sure try your recipe. How would it work with frozen berries…fresh berries aren’t very tasty here this time of year.
I usually just microwave the pre-packaged original oats.
I’m learning how to run my new Dell laptop…a little different than my Acer. I try new games on Face Book almost every day.

Carol I have used frozen blueberries to make this and it worked well, they just kind of turn the whole thing purple when you stir it! I don’t know about using frozen strawberries but I would use bananas and frozen blueberries.

Haha, I am kind of dying to try out a kitchen torch, but it’s also intimidating! The oatmeal looks fantastic

No worries about using the torch, just make sure you keep it pointing away from yourself!

OH MY that oatmeal looks amazing! I add protein powder to mine! I usually add berries & cinnamon & sometimes brown sugar or maple syrup but not too often on that…
LOVE sweet potatoes – love!

Jody I still don’t understand Twitter! Pinterest is awesome but I just don’t have time for all this social media stuff. It’s about all I can manage to get a couple posts up each week!

I tried a couple times to make Oatmeal Brulee after you first mentioned it on your blog, but was not successful. Though it tasted great, I could never get the sugar to caramelize. It would melt, but not harden again to that brulee type top. I can’t tell from the pictures, but is the top of your oatmeal have a hard sugar crust?

Hi Jenn!
It’s not as thick as a layer of caramelized sugar when done on the oatmeal.
I think since the oatmeal is hot the sugar starts to melt before it’s torched and that seems to affect the end result. Even so it’s delicious!

I LOVE oatmeal in any way, shape or form. I buy it in gallon bags at an Amish Food Store! Ironically, I thawed some frozen blackberries earlier this week so will most likely have this oatmeal for breakfast this morning!!
We had your Maple Acorn Squash last night and declared it a RESOUNDING success. Our Walmart has ALL winter squash for .68/lb right now, so I’ve been stocking up. Will go back for more of the Acorn!!

I love your little kitchen torch, but I am afraid Clint would get hold of it and burn the house down.
