Hitting The Trails Again and A Fabulous Salad Dressing

The weekend weather was brilliant and we took full advantage of it. Things got off to a good start early on Friday when the college kids agreed to go hiking with me! We decided on an old favorite hiking spot where there is a lovely waterfall at the end of one trail.

The views were magnificent.

We could see for miles.

My babies! Shhh – don’t tell them I said that!

Saturday morning I asked hubby Tom if he wanted to go hiking and sure enough he did. There was a trail our son David had told us about that we had been wanting to try. David couldn’t join us but Katy did. It was a fabulous adventure.

At the trail head we could tell this was going to be a good hike.

We just couldn’t stay on the trail. The river below was calling out to us and we had to find a way to get there. Hubby Tom scouted for a safe route.

This view was our reward. Well worth climbing rocks –  don’t tell Grandma Jan what we did!

We came home tired, dirty, a little sore but oh so happy. It was a good day.

I have been eating a lot of salads like this lately. Tons of fresh berries and baby greens.

For an easy addition of protein the Amylu Sweet Caramelized Onion Chicken Burgers do the trick. I buy them at Costco.

A fabulous salad deserves an equally fabulous dressing. I have been making a large jar (double recipe) of this homemade salad dressing recipe that my friend Linda shared with me. It’s a wonderful basic recipe that is superb as written and it allows the salad greens to be the star. Having said that, this recipe can be tinkered with depending on what you have on hand. Swap some fresh lemon juice for the vinegar, add a little garlic if you wish, some freshly ground black pepper … you get the idea. A little goes a long way.

Jacque Pepin Vinaigrette

  •  3 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • 1 tsp Dijon-style mustard
  • 1 Tbsp water

Hey happy Monday everyone! Some of you may have today off – if so I hope you are doing something fun. Two of my friends are joining me on my 3 mile daily walk and then we are going out for lunch. It’s always good to have some “girl” time.

I made a couple of old favorite recipes over the weekend. We had Katy’s favorite Asian Turkey Burgers and in fact I made a double batch so we could freeze some for future meals. They have an extra special reduction sauce that takes them over the top! Sunday breakfast was the super delicious Carol’s Short Cut Eggs Benedict and some hash browns. The family was so happy. Since I still had some fresh ground turkey to use up I tried a new recipe for Swedish meatballs for lunch. I will share that recipe with you soon.

What’s cooking this week? I don’t know yet but I’ll tell you as it plays out!

What’s your favorite form of exercise?

I love to power walk outside and to hike through nature. It’s wonderful for the mind and the body. It’s my favorite form of exericise because it doesn’t feel like exercise, it’s fun!

    I love those chicken burgers also! You have just reminded me that I need to make an emergency trip to CostCo. Have you ever tried the lime ones from TJ’s? I have them in my freezer, but haven’t tasted them yet.

    I used to eat those burgers all the time! Then I think I got burned out:( I am prone to doing that. Going on a kick until suddenly I just can’t stand it anymore, whatever I was eating.

    As for the food – I love the colors of that salad!!!! I have not seen the burgers but I tend not to buy the big packs of stuff at Costco with just 2 of is & hubby doe not eat quite like me! 😉

    My fave exercise – you can guess – lifting weights! 🙂

    What lovely photos! My favorite exercise is yoga. I try to do a little everyday. Your salad and dressing look so yummy. Have never tried the Amylu burgers, but we enjoyed the meatballs with cranberries and jalapenos over the holidays. Everyone loved them.
