17 Day Diet Vegetable Chicken Soup

This soup is a 17 Day Diet version of my Chicken Vegetable Soup. It is just as delicous and filling but made with a few different ingredients. Perfect for all cycles of The 17 Day Diet or Weight Watchers. Low sodium V8 juice adds tons of flavor and nutrition. If you don’t have kale on hand use spinach instead.

17 Day Diet Vegetable Chicken Soup

  •  1 Tbsp olive oil or vegetable oil
  • 1 onion chopped
  • 2 cups carrots, peeled and diced
  • 4 celery stalks, chopped
  • 2 cups cabbage, chopped
  • 4 cups chicken stock or broth
  • 4 cups tomato and vegetable juice, low sodium V-8
  • 3 cups kale, chopped or sub spinach
  • 2 teaspoons Herbs de Provence
  • 12 ounces cooked diced chicken

1. In a large dutch oven over medium heat, add the oil, onion, carrots, celery and cabbage, cook stirring occasionally until all vegetables are soft.

2. Add broth and tomato juice, bring to a simmer and let simmer until vegetables are cooked through, 25- 30 minutes. Add chicken, chopped kale and Herbs de Provence. Simmer until kale is cooked and chicken is hot. Serve.

Servings: 6    Serving size: 1/6 of a recipe (about 1 3/4 cups)
