Do your holiday weekend plans include a BBQ type gathering? Some of my all time favorite BBQ recipes are already on the blog. What I love most (besides the flavor of food cooked outside) is the easy clean up! I still end up making a few things on the stove or in the oven but since hubby Tom cooks as much as he can on the outdoor BBQ it really makes things seem easy. For an appetizer keep it simple and lower calorie so you can enjoy more of the main meal. I like to serve a little fresh fruit, my homemade hummus with some pita bread and fresh veggies.
At our house we love pork ribs and this recipe is easy peasy – no fail – perfect ribs every-time! No really, trust me, they turn out perfect, juicy and tender. Indian food can also be made on your outdoor grill and it’s so healthy made this way. Tandoori ChickenPlatter with Grilled Vegetables is a powerhouse of flavor and just look at all that color! If you prefer your chicken be brushed with a smokey BBQ sauce you’ll love this Tyler Florence Open Nature BBQ Chicken recipe. It does require a little more rep time but it’s so worth it as the chicken is super moist.
No matter what your entree is you have to make Esau’s Grilled Corn with Lime - we never want to eat corn on the cob made any other way! It’s really that good – I promise. If you have corn on the cob and potato salad you must have Honey Chipotle Baked Beans - they get rave reviews every-time I serve them. For a super low calorie side dish take some of your favorite fresh vegetables like asparagus, zucchini and peppers, brush or spray with olive oil and lightly grill – so simple and tasty. My favorite summer salad is the Strawberry Spinach Salad - not only does it taste good but it’s beautiful to look at!
For dessert these Chewy Pecan Bars are a must have! They are so rich you can only eat one at a time but it makes a huge pan full - perfect for sharing with your family and friends. Don’t worry about leftovers tempting you – there won’t be any left!
If cheesecake is more your style this happens to be the best Light Cheesecake I have ever eaten. It’s incredible and to guild the lily top it with some seasonal Rhubarb Strawberry Sauce. Yum, Yum, Yum!
You can never go wrong with a little Sorbet and fresh berries, it’s refreshing, easy and low calorie. You can even make your own delicious Strawberry Coconut Ice Cream which reminds me a lot of sorbet and it’s dairy free – great for those who are lactose intolerant.
Okay I have to stop posting about all of these recipes -it’s making me hungry!!! I’m not sure what day we are going to BBQ. On Sunday we have to travel to attend a business function that hubby Tom is speaking at. We have to finish working on the kitchen table and we have a long list of other household chores that need our attention. Of course after writing this post I really want to make those ribs and our favorite side dishes! Now I just have to figure out how to work it all into our busy schedule.
