Katy’s Best Guacamole

I think I ‘m a pretty good cook and over the years I have passed on my culinary hints and tips to daughter Katy. Even though we use the same recipes there are some things that she makes better than me! Her guacamole is outstanding. I’ve watched her make it and I think I do the same things she does but hands down, hers is always better than mine. Go figure. Maybe it’s because food that someone else makes for you, always tastes better. Whatever the reason I plan on letting her continue to make guacamole for me every chance I get.

Katy’s Best Guacamole

  • 4 large ripe Hass Avocados – peeled-mashed with a fork
  • 1/2 cup chopped fresh tomato
  • 1/4 cup minced red onion
  • 2 Tablespoons sour cream
  • 2 Tablespoons fresh lime juice or more to taste
  • 1 Tablespoon chopped fresh cilantro
  • 3/4 teaspoon garlic salt
  • 1/4 teaspoon fresh ground black pepper
  • A few shakes of Adobo seasoning (a traditional Latin blend of salt, garlic, pepper and oregano – go lightly as it is salty)

Mix, chill and enjoy!

Yield: 2 1/2 cups  Serving size: 1/10 of a recipe - about 1/4 cup

Guacamole isn’t complete without some chips to dip in it but you don’t have to break the calorie bank to achieve having a little crunch. You can make your own in a matter of minutes that are guiltless yet uber crunchy and delicious! Here is the recipe for Baked Tortilla Chips.

Nutmeg Notes

Well we have had a little wedding drama this week as the bridal store lost the dress for the maid of honor. She bought it out of state where she was doing her graduate studies and it was suppose to be shipped to our house. Instead it showed up at their store and when they called to tell her it was in, she reminded them that she no longer lived there and they needed to ship it to the brides’s house. When we never received it she called them again and they said they had sent it to the billing address – her old apartment! How did they do that when she gave them our address and told them to ship it here? They were going to trace it through UPS but Lisa took it upon herself to call a friend and ask him to go to the apartment complex and ask around. Sure enough he found it! Talk about a sigh of relief – this was great news. I guess you can’t get by without a little drama tossed in just to keep things exciting. I could use a little less of this kind of excitement.

I had a little down time this afternoon as the window washers are here and I have to keep out of their way so I decided to try and get a post written. I am set up in my laundry room – it’s the only place (except for a water closet) with no windows! Short and sweet is all you get this week!

    Mmm, I love guac. This looks great (love the addition of cilantro). I had to laugh at the image of you hiding out in the laundry room to write your post! I made Yucatan shrimp cocktails for dinner last night (shrimp, mango, jicama, cilantro, tomato, lime, lemon, orange, etc) and topped it with sliced avacado.

    Whenever I make guacamole, I end up eating the entire recipe for a meal I love it so much! Needless to say, I don’t make it often! lol. Glad the dress was found-I would have been FREAKING!

    I’m not an avocado fan. It makes me sad, because guacamole looks so cool and creamy, which would make it especially enjoyable in the summer.

    Sounds amazing!
    I love avocados. I incorporate them in so many ways; salads, spread on toast, sandwiches, stir-frys, ANYTHING! I think avocados are like bacon, they can be added to anything and they just enhance the flavor!

    That is crazy about the dress! Glad it is found! I love avocados … guac is my favorite ! I used to not eat avocados because of the high fat, but I’m glad I changed my mind! That recipe is a lot like my guac recipe! :)

    Not a big fan of avocado, but I do think that whole foods are the best source of fat.

    When it comes to the different types of foods, “Mexican” is the one hardest for me to find a healthy version of.
