Stuffed Banana Boats

It’s not the prettiest dish but no one will mind because the flavor is amazing! The banana gets all gooey with the melted chocolate and the crunch from the nuts are a nice contrast to the warm soft banana. It’s perfect as is but, if you want to take this to the next level you can add a dollop of lowfat honey Greek yogurt or a scoop of low fat vanilla bean ice cream. Oh so good! Minus the chocolate this might even show up on my breakfast table with a little peanut butter and granola. Why didn’t I think of that before?

Stuffed Banana Boats

  • Fresh bananas – ripe but still firm – at least one per person – but some will come back for seconds! Oh, yes they will. :)
  • an assortment of fillings – you don’t need all of them – these are just suggestions – set them out in little bowls with spoons
  • chocolate chips
  • white chocolate chips
  • peanut butter chips
  • chopped nuts
  • dried fruit – chopped
  • blueberries, raspberries or chopped strawberries
  • shredded coconut
  • flax seeds
  • chia seeds
  • cacao nibs
  • graham cracker crumbs
  • granola
  • caramels
  • nut butter or nutella
  • marshmallows
  • aluminum foil
  1. Preheat grill to medium heat.
  2. With a sharp knife cut open the banana without going all the way through to the bottom.
  3. Leaving the skin on gently pry open the banana slit and stuff it with a couple tablespoons of your favorite fillings.
  4. Take a piece of aluminum foil and scrunch it up around the banana to hold the banana up right.
  5. Place the stuffed bananas on the grill, close the lid and let cook for about 10 minutes or until the chocolate gets all melty.
  6. Give everyone a spoon and dig in!

Note that the banana skin will turn black from the heat.

Options- heat oven to 350 and place banana boats on a baking sheet – bake until chocolate is melty. Skip the foil and place the stuffed banana on a plate and microwave on high for 30-60 seconds – timing varies depending on how powerful your microwave is.
