Pork Tenderloin is such an amazing and versatile cut of meat. It’s lean and so easy to cook making it perfect for just about any day of the week. When you slice pork tenderloin and cook it on the stove top it becomes an easy weeknight entrée. This recipe includes a balsamic reduction that is nothing short of a company worthy meal. It’s surprising that such a simple recipe has this much flavor – but it does!
There was so much sauce that we were able to coat two pounds of cooked pork tenderloin medallions instead of the one pound the recipe called for. Leftovers were reheated gently on low power in the microwave and just as good as the first time it was served.
I didn’t have fresh rosemary so went with dried and it was plenty flavorful so I can only imagine that fresh rosemary would be over the top amazing! You’ll be tempted to lick you plate but don’t – your mama wouldn’t approve!
This was not an easy dish to photograph – all that deep dark balsamic reduction almost looks like chocolate. Don’t over cook the pork just 2 minutes per side is perfect.
Pork Tenderloin Medallions with Balsamic Reduction
- 1 tablespoon olive oil
- 1 tablespoon minced shallots
- 1 garlic clove, minced
- 1 cup balsamic vinegar
- 1 1/2 teaspoons sugar
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon Dijon mustard
- Cooking spray
- 1 (1-pound) pork tenderloin, cut into 12 slices
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
1. Heat oil in a small saucepan over medium-high heat. Add shallots and garlic; sauté 2 minutes. Add vinegar and next 3 ingredients; cook until reduced to 1/2 cup.
2. Heat a large skillet over medium-high heat. Coat pan with cooking spray. Sprinkle pork with salt and pepper. Place pork in pan; cook 2 minutes on each side. Add balsamic reduction; cook 1 minute, turning pork to coat.
Yield: 4 servings

Nutmeg Notes
This week has been the most active week I have had post foot surgery. You are probably as sick of reading about it as I am sick of dealing with it! Sorry, but my life revolves around how my foot is doing on a daily and sometimes hourly basis. The good news is I am making progress. It’s far from feeling normal but I keep plugging along and pushing myself to do more.
I have worked up to doing 3 miles on the treadmill. Okay it takes me over an hour to do this – so don’t get too excited! Even so it’s an accomplishment and I’ll take it.
Although I have had an increase in exercise it’s not enough to create any weight loss – I guess I am moving too slow for it to actually create a good calorie burn. Perhaps my body is still healing and not in a weight loss mode. I must admit that it’s frustrating but I will keep at it and eventually it will all come together and I will see some results.
Are any of you Super Bowl fans? Admittedly we are not a sports family but do enjoy watching the half time show and the commercials! As you might imagine our local news is all over the 49ers being in the Super Bowl and every news cast is filled with segments about it.

Well Jody from what I have read and heard on Dr Oz your body doesn’t want to lose weight when you are under stress! I think post surgery counts as stress and seems like it is preventing me from losing weight. Patience!

I think the peppermint sounds delicious!! I love peppermint in so many things! Every Christmas I make a sugar free, non dairy cookie for my son who has food allergies – I always used to top it with Bob’s sugar free candy canes but this last Christmas I couldn’t find any anywhere! Hmm the peppermint chocolate looked yummy in that cute teacup!! But I think I would most like to try the lemon. I brew my own green tea for ice tea and love a bit of lemon in it.
