Turkey Meat Loaf

It’s been over a week since I last posted – how does that happen? This past week a few new recipes have been tried and one was for this Turkey Meat Loaf. I happen to like a good ole meatloaf on a cold winter day. Growing up my mom made a delicious meat loaf and I always enjoyed that meal. Yummy! I usually make my families favorite mini meatloaves since they cook quicker and offer built in portion control. This recipe got great reviews so I had to give it a try. Since I had the extra time this one was baked as the recipe suggested in a loaf pan.

Turkey Meat Loaf

 I was worried that since it was made with ground turkey that it might be too soft and difficult to slice. I was wrong! With the addition of oatmeal it was nice and firm without being dried out and it sliced nicely! As you can see on the edges the ketchup glaze did start to burn the last 10 -15 minutes of cooking time. At that point I should have covered it with foil to prevent that from happening. The recipe said this made 6 servings but I could only eat one slice as it’s very filling. Two slices is the perfect  hungry – man size serving.

Turkey Meat Loaf

 The recipe called for garlic powder – I swear I just bought some garlic powder. I even remember standing in the spice aisle looking at garlic powder and deciding which one to get – but it was nowhere to be found so I used a couple of fresh garlic cloves – minced. It also called for 3 tablespoons of Worcestershire sauce and my supply had dwindled down to just under 2 tablespoons so I went with it. The end result was quite flavorful and the left overs reheat without drying out. It’s not my favorite meat loaf recipe but I would make it again for a nice change of pace and next time I would add at least half a cup of finely minced onion.

Turkey Meat Loaf

  • 2 pounds ground turkey breast
  • 1 cup quick-cooking oats
  • 1/2 cup ketchup
  • 1/4 cup chopped fresh parsley
  • 1/4 cup (1 ounce) grated fresh Parmesan cheese
  • 1 tablespoon dried oregano
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons low-sodium soy sauce
  • 2 teaspoons dried basil
  • 1 teaspoon garlic powder or a couple of garlic cloves, minced
  • Cooking spray
  • 1/4 cup ketchup

Preheat oven to 400°.

Combine the first 10 ingredients in a large bowl, mix to combine.

Place the turkey mixture in a 9 x 5-inch loaf pan coated with cooking spray. Top with 1/4 cup ketchup. Bake at 400° for 1 hour and 15 minutes or until done. Let stand for 10 minutes before slicing. Check meat loaf after about an hour and tent with foil if the ketchup is getting too brown.

Yield: 6 large servings or 12 smaller servings

Nutmeg Notes

Like the rest of you we have been busy around the Nutmeg household. A few new recipes have been tried, new hiking trails have been explored, new hiking boots, running shoes (used for fast paced walking not running) have been purchased. I even managed to find some Dansko comfort sandals and some casual leather shoes for wearing with my jeans that work with my post surgery foot! Regular shoes can only be worn for short periods of time – my hiking shoes remain my most comfortable footwear option! I still need a couple more summer options like low heel sandals that offer good support and don’t look like old lady shoes! Is that too much to ask? My foot is getting better and I am working through the aches and pains that come with being more active. Since the mechanics of my foot have changed (second metatarsal is shorter now) and my body weight now lands under the base of the big toe like it should, it changes how my foot works and feels. Everything is having to get used to working in a new way. When I am on my feet a lot the post surgery foot swells and the second toe is always in a state of being swollen and quite annoying. That should get better with time.

I am beyond thrilled to be able to drive, walk and hike again. After being couched for so long its difficult for me to take time out and sit at the computer for very long. I feel like I need to be up moving! That’s not a bad thing. With the fitbit one tracker logging my steps and calories burned its a good incentive to keep moving and reach or exceed my daily goal of walking 10,000 steps! Last week my average daily steps was 13,445 and I walked a total of 42 miles! Yippee! All this activity is helping me to sleep better. Love that. 🙂

It feels like winter has gone on forever. Spring is right around the corner and I am looking forward to it! I already stocked up on allergy meds as trees here are starting to bloom.

    Our Bradford Pears should be blooming in another week or so. Forsythia is putting on a show for now.

    I used to just bookmark my onlne recipes, but now I use Pinterest. I sort them by Healthy(ish) and Decadent. The former will likely be attempted at some point, while the latter are just recipe hoarding. Whatever. It seems to be satisfying enough for me to pin them rather than eat them, so I’ll take it. 🙂

    Glad you’re up and about, Tami! I don’t think anyone will blame you for wanting to move, move, move after what you’ve been through!

      Hi Cammy! I like to use Pinterest too. “Recipe hoarding” I suffer from the same affliction. Thank goodness I don’t try all the recipes I have collected – think of the calories we save by just hoarding them. 🙂

    Greetings, again, from Nebraska. I have two suggestions for you for comfort shoes: the web site barkingdogshoes.com and the brand Naot. Finding comfortable shoes is a challenge for me; I can imagine how much harder it would be post-surgery. Glad you’re up and about. Also envious of your blooms. No signs of spring in these parts, except the occasional robin.

    This meatloaf recipe looks yummy!! For the recipes I want to try, I print them off, try them and if they get two thumbs up from the family, I put them in a binder (using protective sleeves). Easiest way I’ve found to stay organized – plus if the husband is in charge of dinner, it’s easy for him to find the recipe! My only problem is my “to make” folder of recipes is overflowing!

    Regarding shoes….I was having some knee problems a few months ago and had to have special inserts made for my shoes and the physical therapist recommended Keens for a more casual shoe (which I wear to work) and Brooks (for exercising). So far so good – no more knee pain, but I will probably have to wear the inserts indefinitely so not sure what I’m going to do with a closet full of shoes that the inserts don’t fit!

      Hi Beverly! I have about 10 binders full of recipes from the internet. Some are tried and true favorites and some have yet to be tested. I now use Pinterest as well and also copy and paste into word documents and save them as documents. I have more recipes now than I will ever get made! But it sure is fun finding them. I like that you slip yours into plastic sleeves – that keeps them nice and clean.

      Sorry to hear of your knee problems. I also have orthotics that I wear and you right it does rule out all the shoes they won’t fit in. Before my foot surgery I would wear those shoes without orthotics for special occasions.

      I have Keen hiking shoes that I wear my orthotics in and they are my favorite most comfortable shoes ever! I did try on a more casual street shoe by Keen but that particular style wasn’t a good fit for me. I am hoping that REI will get more styles in with Spring almost here and I will have more options. The Keen hiking shoes don’t hurt my feet and I can walk for hours in them.

      I just got new high top hiking boots made by Vasque and don’t laugh – I wore them in the house today for about 5 hours to test them out and I was in foot heaven! They have so much support. I wonder if they make regular shoes as well.

      I haven’t heard of the Brooks either – I just got new Asics for my daily walks – they feel great!

      When your feet, knees or joints hurt it makes you feel bad all over. I sure hope your knee problems are gone for good! Thanks for the shoe tips. 🙂

    I use a fantastic mac program called YummySoup to store all my recipes. I have been using it for years and it holds/stores all 800 recipes. I prefer having all my recipes on the computer so that it is always with me when I travel and cuts down on a ton of paper.

    Glad to hear you are walking better. I don’t know if we get that brand of shoe here but sure going to look in to it…I need a comfortable pair of walking shoes! 13,000 steps is great!!!!

    I haven’t been here for awhile, life sort of got in the way of a lot of things!!

    I store my recipes at the Cafe and also in my Master Cook. I decided to put all my favorites on my board because if my computer crashes I will lose them all on MC.

      Life does get in the way of things now and then Carol! I hope you can find a comfy pair of walking shoes. I love my hiking shoes and my running shoes but sometimes a girl just wants to look more girly!

    Do you have a store you can go to that will put you in a comfort shoe based on your needs? We do. Years ago when I first had foot issues (diagnosed a decade ago with neuroma), I went to ours and they put me into Think! brand. I have been wearing them ever since. They are not cheap. Oh how my cheap shoe days are over. And not cushy, either. But very supportive and work for me and my issues. Good luck!

      We have several comfort shoes stores here and the other day I did look in two of them but I guess I wasn’t in the mood to try on shoes that day. It’s so overwhelming as there are so many different brands and styles to choose from. I don’t want to make the wrong choice because as you pointed out they are not cheap – everything is well over $100 a pair. Like you mentioned I am looking for supportive not cushy – I am suppose to stay away from the “flexible” sole shoes. I have not heard of the Think brand but will look them up on line and see if anyone locally carries them. Thanks for the suggestions Karen!

    I recently discovered that I like meatloaf, as a once in a while comfort dinner of course, this turkey meatloaf looks right up my alley!!

    It is so great to hear how much you are getting out and about and hiking! Just awesome! I made your Pork Tenderloin Recipe with the Balsamic Vinegar Reduction last night! It was so EASY and DELICIOUS! I agree that it is company worthy! We’ll definitely have it again!

    I use Evernote for my on-line recipes, and I absolutely love it! I have the App on on my iPad, phone and computer, so I can access my recipes anywhere. I use tags on my recipes. It is very easy to sort and search on key ingredients. I also have “tags” for tried and to-try, crockpot, etc… You can also “share” a notebook, so if you wanted your daughter to have access to your recipe files, you could do that as well. I have also started playing with use my iPad’s camera to take a pic of paper copies of recipes inside of Evernote, and it works great! The Evernote App is free in the App store.

      Michele thank your for explaining Evernote – I had no idea it was an app! It sounds great. I love that you can have your recipes on all of your devices – perfect for looking up a recipe when away from home to make sure you have the ingredients or when on vacation and so on. I will have to look into it. Right now we rely on the blog for my favorite tried and true recipes but sometimes daughter Katy calls me and needs a recipe that hasn’t yet been posted. What I usually do then is take a photo of it with my iPad and email it to her. Saves me the time of typing it out and she gets the recipes in a matter of seconds! Isn’t technology amazing?

      Thank you for letting me know you made and enjoyed the pork tenderloin recipe with the Balsamic Vinegar Reduction. I need to make that one again soon. We loved the leftovers as well.

    Oh those buds are just beautiful. I cannot wait for signs of spring. It’s been a very long winter that seems to not want to go any time soon.

    I almost always buy Clarks for comfort. My feet seem to really like them and I especially like their sandals, as they give my feet much more support than other brands AND you can usually find them on sale, so the price is decent too.

    My basic turkey meatloaf is a go to recipe in this house. I should change it up a bit and try your version. Can you believe my middle son’s favorite meal is meatloaf? haha

      Hi Renee! I have several pairs of Clarks from pre foot surgery that I like but they don’t seem to fit so good for me now. The change in foot mechanics has really made a difference in what kind of shoes feel good. Its a learning curve for me!

    I’ve been looking for some new recipes to try while Bill is in Spain all next week. You know, the kind I’ll love and he wouldn’t be particularly fond of. This Turkey Meat Loaf is perfect. I’ll be making it tomorrow after putting him on the plane. I even have all the ingredients and it fits perfectly into Cycle 2 of the 17DD. Meals made for the next couple of days. Yippee!!

    I still haven’t found a good way to store recipes on my computer. Mostly I just put them into a word document and save into different category folders.

    Glad you are back to doing the things you love!

    As for shoes, I found the Onex brand in Las Vegas last year. The minute I put them on they were comfortable and gave me no blisters after walking all around for a few days. A lot of sandal options with pizzaz if that is what you want too!

    When I came home from Vegas I went to my favorite site Zappos to see what styles they had to offer. As you might know, you can purchase several sizes as each brand size is so different anymore and have free shipping both ways! I love this for my kids shoes too.

    My recipe collection is out of control. I usually copy onto a Word document and save on my computer and print when I need to. I have a binder but it is overflowing with no organization so I tend to print a recipe several times depending.

      That is another brand of shoes I have never heard of, Onex – I will look those up on the internet. We do sometimes order shoes from Zappos – great customer service! I am finding that some brands that use to fit well and feel good on my feet just don’t work for me anymore. Its trial and error to find something that works. Thanks for the information about the Onex brand.

      I have a whole collection of binders filled with hard copies of my internet recipe finds! Its an addiction for sure. 🙂
