There are so many things about this baking mix that I love. First and foremost it’s delicious. Healthy food is great but if it doesn’t taste good I’m not going to eat just because it’s healthy. I love food and believe eating healthy should be a pleasurable experience.
This is just one of my favorite ways to eat a Dr Bob’s Donut made from the ultimate chocolate baking mix. A single serving donut covered in Dr. Bob’s Quick & Easy Creamy Basic Chocolate Sauce with fresh raspberries. Healthy eating never tasted so good! All of this chocolate decadence for around 150 calories. This makes me so happy! Do you get this excited about chocolate? Most likely you have never heard of Dr. Bob’s Ultimate Baking Mix. It was a new product to me too. They just opened a brick and mortar store near where I live and they have these healthy donuts in a self serve – build your own format with many gourmet toppings to choose from including dairy free soft serve. I have been several times and have enjoyed many different combinations. Everyone I have taken there has also enjoyed the treats! You can read all about them at Dr. Bob’s Donut’s & Doyos. Doyos stands for donuts with dairy free yogurt! Love that. Since they know you can’t visit their store everyday they also offer kits for making these amazing donuts at home.
When I opened the baking mix package for the first time the aroma tickled my senses with hints of cinnamon and chocolate. I knew right then it was going to be special and was thrilled that my homemade donuts were just as good as the donuts sold at the Dr.Bob’s Donut store. It’s the perfect way to start any day. The little heart indentation is especially appropriate for Valentine’s Day. The texture is like a moist cake donut or a muffin. Delicious as is with a cup of your favorite hot beverage or…
… You can kick it up a notch or two and top off your donut in countless ways. Here are a few more of my creations using the chocolate baking mix. For breakfast or dessert I enjoy a single serving with any combination of the following; fresh fruit, unsweetened shredded coconut, cacao nibs, goji berries, almond butter, non dairy ice cream or non dairy yogurt and some of Dr Bob’s Chocolate Sauce. I enjoyed the chocolate bake mix so much I decided to go back to their store and get a bag of the blonde mix. I have found that it works best for me to use just a little dab of coconut oil on the inside of the silicone vitamold to prevent sticking. To have the perfect amount of batter for 4 servings use 3/4 cup plus 2 tablespoons of baking mix and an equal amount of water plus what ever type of sweetener you prefer. Stir until well combined, divide evenly in the vitamold that has been placed on top of the bamboo tray for stability. Place in the microwave oven for about 2 minutes. Microwave times will vary so start with 2 minutes and do the toothpick test – if it’s still too wet in the middle add another 10 seconds and check again. It takes exactly 2 minutes in my microwave. In this batch I reduced the mix by 1/4 cup and added in 1/4 cup chopped apples and a tablespoon raisins, some cinnamon, vanilla extract and of course a little freshly grated nutmeg. This is how they look hot out of the microwave oven. Oh the aroma of cinnamon, nutmeg and apples was delightful. These were a little more delicate than the chocolate ones – the apples and raisins add moisture and make them a bit softer. These can also be made as a mug cake in the microwave oven – you know a single serving mixed up and microwaved right in a mug or a small ramekin. How cool is that? You can measure out enough single serving baking mix into containers long with your choice of sweetener and any add ins and take it with you to work or when traveling. All you need is water to mix with it and microwaves are everywhere these days. In my microwave oven a single serving in a ramekin only takes 1 minute. Easy – peasy.
A little warm applesauce on top and some freshly grated nutmeg was all it needed. Simply scrumptious. I know some people don’t own microwave ovens and don’t like the idea of using them – no worries – you can also bake these in a conventional oven or a toaster oven if that’s what you prefer.
Chef Tasha at Dr. Bob’s Donuts shared with me that in addition to sweet donuts I could use the blonde mix to create savory creations as well. Of course I had to give it a try. I replaced 1/4 cup of the blonde baking mix with 1/4 cup corn flour and added frozen corn and chili powder. With a little salsa and cilantro it was a nice change of pace for breakfast. I know that sounds strange but sometimes I like something savory for breakfast. This would also be perfect for lunch with a side salad or to serve along a steaming hot bowl of chili. Tasha makes some with pizza sauce and Italian seasonings for a low calorie entree.
