I was at my all time highest weight in 2002. I joined Weight Watchers and got to my goal weight after dropping about 47 pounds but it was difficult for me to eat all foods in moderation and keep the weight off. I gained back aboout 30 pounds and yo -yo dieted. In 2013 I adopted a WFPB  – which stands for a whole foods plant based diet. I was doing great – lost weight and was feeling awesome until my body became hypothyroid. Even though I didn’t change anything about my plant based diet or my exercise I started gaining weight again. I heard about Chef AJ’s Ultimate Weight Loss program and I asked her if she thought I could lose weight even though I was suffering with hyporhyroidism. She told me she was also hypothyroid and she still managed to lose weight following her Ultimate Weight Loss protocols! That was all the encouragement I needed. I joined her UWL program in 2015, did what she said to do and lost my weight. I have maintained my weight loss and can’t believe I can eat all these amazing plant based foods, feel full, never have to go hungry and yet I have a slim body and no cravings for junk food! It’s the best thing I ever did for my body and my mind. Eating this way creates a calm and stable brain chemistry that makes it much easier to eat healthy and feel great. I no longer stress over my weight or what to eat or what not to eat! I have peace of mind and a healthy body. This is not a fast weight loss program but it is a sustainable lifestyle plan. A Little Nutmeg Nugget: When I started this blog in January of 2010 I followed what I understood to be a healthy version of the standard American diet, ironically also known as the “SAD” diet. As interest in my own health and how it was affected by the food I ate evolved, I transitioned to a whole food plant based diet also known as “WFPB” diet. I have wrestled with the fact that this blog still contains all those posts and recipes from the SAD way of eating I have left behind. I no longer advocate for anyone to eat that way. At this time I am leaving those recipes and posts here. It is a record of my journey and how I came to follow a WFPB way of eating. It is my hope that those who still come here for those old recipes will be curious about what I am doing now. Perhaps they will dip their toes across the line as I did and try some plant based recipes and learn more about the health benefits.

    I’m very curious abou this….Is it possible to control hypothyroid with diet alone or must you take medication?
    You have done an amazing job on your journey and I enjoy your recipes. I have been WFPB for 5 years and love this way of eating and preparing food.

      Hi Mary,

      I still take meds for hypothyroidism – I don’t believe diet can change that – once the thyroid stops making enough hormone you need to replace it. What the UWL diet did for me was to help me lose the weight I gained when my hormones lowered too much. Thank you so much for your kinds words. Congratulations on being WFPB for 5 years! That is so awesome.
