The End of The Road Trip & Weighing In

We got home last night after spending the past two days on the road driving home from Nebraska. We had an awesome time visiting family and friends. We enjoyed a two day family reunion with hubby Tom’s family. Lots of visiting, eating, trips down memory lane, eating, watching the children get to know one another and did I mention eating?
We had a big family get together with my side of the family to eat an incredible meal that my mom put together. Mom made lots of my favorite foods while we were there including an early birthday cake for me. My birthday isn’t until later in the month but since I won’t see her then she wanted to treat me to my favorite birthday cake which is her humming bird cake. I had a smaller piece than I use to take but I ate it slowly and enjoyed every moist delicious bite. It is made with coconut, nuts, bananas and pineapple and a ton of oil. I would be happy to post the recipe if anyone wants it. I really need to come up with a lighter version so I can have it more often than once a year. Thanks mom!
Does it sound like we did a lot of eating? Well we did, but I tried to balance it out by having my usual breakfast, a light lunch and I saved more calories for the evening meal. I tried to get a walk in each day but I missed a couple of days and when you are driving in the car for 12 hours a day there isn’t much calorie burning taking place. However I did my share of chair dancing to great music while we traveled down the highway! That had to burn some extra calories right?
I did not treat each meal as a vacation meal. I picked my favorite higher calorie foods that I wanted to enjoy, took smaller portions of those and was quite content with my choices. After being gone for 10 days I got on the scale this morning and drum roll please….I lost .8 pounds! I weighed an even 133 today. My goal was to maintain so I could not be happier. I never felt deprived or over stuffed and I don’t regret any food that I turned down.
I am off to the Farmer’s Market and the grocery store to stock up on healthy fresh produce. It will be a day of getting caught up on laundry and settling back in to life at home. I have lots of vacation photos I want to share later in the week. It will take me a few days to catch up on everyone’s blogs but I hope everyone has been having a fantastic summer.

Welcome back! Vacations are nice, but isn’t it a relief to get home and get back into the routine too? I’m like you, as soon as I get home from a trip where we’ve eaten out a lot I like to head to the store for some healthy fixings for meals.

I had a big smile on my face when I read that you lost .8 lbs on your vacation! That’s wonderful. Being with family and having a good time doesn’t have to revolve around food!

I love oatmeal raisin, molasses/ginger & snickerdoodle! Oh, there was a special orange cream flavor last summer at a place I get a treat & hoping it comes back this summer sometime soon!
Well! That cake looks magnificent!!! Between that beautiful cake, an almost ONE POUND LOSS, and now a trip to the Farmer’s Marketn, I’d say you’re done pretty well!

I love hummingbird cake! Unfortunately, I don’t have it even once a year. (You don’t expect me to bake it, do you?*g*) My current favorite is carrot cake with cream cheese frosting. That reminds me I haven’t had any in waaay too long.

My favorite birthday cake….it has to be a special strawberry cake that we can get at the bakery where I shop for groceries….it is not too sweet and the flavor is incredible. I don’t have any guilt when I have some.My other favorite is a carrot cake with cream cheese frosting…I have to be careful with that one!!

Oh congrats on losing! You are my hero! My vacation starts Saturday for 8 days! I’m in the last few weeks of maintenance before hitting lifetime and I so want to make sure that I don’t do TOO badly! I’m shooting for maintaining!

Hummingbird Cake

Yield: 20 servings
1 1/4 cups whole wheat pastry flour
3/4 cup oat flour
1 1/2 cups natural cane sugar (or regular sugar)*
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
8-ounce can crushed pineapple in juice
1 cup mashed very ripe banana (leave slightly chunky)
1/2 cup fat-free egg substitute or 2 large eggs, beaten
1/2 cup canola oil
1 teaspoon vanilla extract
1/2 cup chopped walnuts or pecans
FROSTING
8-ounce block reduced-fat (Neufchatel) cream cheese
3 tablespoons juice from the canned pineapple
2 tablespoons sugar
3/4 cup milk
1 package (4-serving size) sugar-free instant cheesecake pudding mix
1 1/2 cups nonfat or light whipped topping
1/4 cup chopped walnuts or pecans (optional)
1. Preheat the oven to 350 degrees F.
2. Place the flours, sugar, baking soda, cinnamon, and salt in a large bowl and stir to mix well. Drain 3 tablespoons of the juice from the pineapple and reserve to use in the frosting (place in the refrigerator until needed). Combine the pineapple and the remaining juice, banana, egg substitute or eggs, oil, and vanilla extract in a medium bowl and stir to mix. Add the pineapple mixture to the flour mixture and stir to mix. Fold in the nuts.
3. Coat a 9-by-13-inch pan (for a sheet cake) or two 9-inch round pans (for a layer cake) with cooking spray and pour the batter into the pan. Bake for about 25 minutes, or until a wooden toothpick inserted in the center of the cake comes out clean. Let the cake cool to room temperature.
4. To make the frosting, place the cream cheese, pineapple juice, and sugar in a medium bowl and beat until smooth. Slowly beat in the milk. Add the pudding mix and beat for 2 minutes. Add half of the whipped topping and beat just to mix in. Beat in the remaining whipped topping.
5. Frost the cake, and if desired, sprinkle the 1/4 cup nuts over the top. Cover and chill for several hours or overnight before serving.

So wonderful that you could enjoy your vacation, old favorite foods and come home lighter. sometimes I think we get those metabolisms burning and they just carry on even through the special occasions.
I have never heard of Hummingbird Cake. Mine favorite is Angel Food with Seven Minute frosting but over the years I changed the from the frosting to whipped cream and berries!
