Feta Stuffed Turkey Burgers

I like burgers, turkey burgers that is! I have several recipes in our regular meal rotation but this feta cheese stuffed burger is a family favorite. This quick and easy Mediterranean inspired burger is full of flavor from the inside out. It starts with salty feta cheese and oregano in the mix and ends with toppings of roasted peppers, black olives and crisp romaine. I always double or triple the recipe and freeze some for future quick and easy meals. Serve with oven fries and a big salad of baby greens with tomatoes, tossed with a light vinaigrette.

Layer on the flavorful toppings.

This is a big burger.

You get a bite of melty Feta cheese in every bite.

For a bottled dressing try Newman’s Own Organic Light Balsamic Vinaigrette, it is delicious.

 

Feta-Stuffed Turkey Burgers

1 pound ground turkey breast
1 Tbsp fresh oregano
1/4 tsp garlic powder
7 Tbsp feta cheese, crumbled
4 small whole wheat buns (WWPs 1)
4 pieces lettuce, romaine
2/3 cup roasted red and or yellow peppers, sliced (without oil)
5 small olive(s), black, sliced (about 4 tsp)

Preheat grill, broiler or non stick skillet.

Mix turkey, oregano, garlic powder and feta together in a medium-sized bowl; add salt and pepper to taste, divide mixture into four balls and then press them gently into patties. (If you don’t have fresh oregano use 1 tsp dried)

Grill, broil, or pan fry patties until internal temperature of burgers reaches 165°F, about 7 to 8 minutes per side.

Serve each burger in a whole wheat bun with a lettuce leaf, 1/4 of peppers and 1 teaspoon of olives and your favorite burger condiments.
