Favorite salad vegetables – Red Leaf lettuce, chopped with arugula, thinly sliced red onions, carrots, celery, beets. Sometime I’ll use Nutmeg notebook’s chickpea salad, or a black eyed pea (Texas caviar) salad as topping.
Favorite dressing – anything from California Balsamic. I order a case each year when they’re running special offers. This time of year, when fresh citrus is in season here in southeast TX, I’ll just squeeze fresh blood orange juice over my salads. I want to taste the greens. Not a fan of creamy dressing.

#1 My favorite chopped salad has some dark leafy greens, steamed brown rice, roasted beets, pineapple, and scallions. I often add a few cashews too! I add chopped pickled sushi ginger for a nice kick! Soooo good!
#2 My favorite vinegar is California Balsamic’s “Ginger.” It’s great on salads, sweet potatoes, and steamed wild rice.

My favorite vegetables for my salads include all greens especially dandelion, augugula, purslane, cabbages, cauliflower, broccoli, fennel, zucchini, mild and hot peppers. Root vegetables like onions, carrots, raw beets, parsnips. Ground cherries, tomatoes are my glorious toppers!
I enjoy balsamic or apple cider vinegar on my salads, however I also mix hummus with salsa and pickle juice for a creamy snappy dressing. Yogurt is occasionally used too with spices, tomatoe paste with a vinegar or nut milk. Aquafaba ( with spices, mustards etc.) is a alternative that whips up nicely too! I love the berry balsamic’s. The fruit balsamic flavors top my list too. I adore NN’s ranch dress recipe, No one can tell it’s vegan; thank you Tammy!!

My favorite vegetables for salads are as many as I can fit in the bowl but top on my list of favorites are carrots, celery, purple cabbage, sprouts, radishes, sweet tomatoes, beets, and avocado. While garbanzo beans are not veggies, I rarely omit them from my salads.
My favorite oil free salad dressing is a balsamic dressing made with a flavored vinegar, garlic, aquafaba, and a good quality mustard, And when I want a hint of sweetness, I throw in a small date.

Tami is precise, knowledgeable, organized, and absolutely charming. I feel like she’s my sister. I love to watch how she works and think her recipes are so good! I started following Nutmeg Notebook about a year ago but really started looking at it after a month long visit to True North where I met Shayda who said she does a lot with Tami. Listening to Shayda’s journey and being at True North made me realize how lucky I was in being introduced to WFPB through Dr. McDougal’s work initially. 2. I have to admit that I am still trying to find a dressing that we both like. I can’t seem to get the flavors just right. If I go to a restaurant, I could eat a quart of almost any of the dressings. I know why—bad things. LOL
3. My Huss and and I became fob eaters last January in trying to heal his cancer. I quickly became overwhelmed at the amount of work that was involved in meal prep. Last spring I discovered Tami and her Nutmeg Notebook—Gamechanger! I have been using the chopped salad everyday since. I prep for about 6 days at a time and love being able to just pull out what I need for the meal.

1. I haven’t found anything that I will leave out of a salad. I did through what I have and try to add as much color as possible. I have not started making chopped salads regularly, but when I have, I do enjoy it.
2. My favorite Oil free dressing is some good balsamic! There is a local seller at the farmers market that keeps me supplied.
3. What keeps me coming back is your simplicity and organization. I am working on adding supplies that with allow batch cooking and freezing to be more organized. My freezer(s) are a bit of a mess!

I use spinach, kale, spring mix or any fresh organic greens. I always use red cabbage, red onion and carrot, tomatoes. Also mushrooms, olives, raw pumpkin seeds and toasted walnuts and hemp seeds. I use broccoli or cauliflower or whatever I see that looks fresh and good.
My favorite oil free dressing is a cashew dressing that has quite a bit of lemon and some tahini.

1. My favorite vegetable for salad is chopped cucumber. I also like shredded carrots, purple cabbage, and then I add about 1 to 3 olives, which I call salad candy. I also love to put a little bit of vegan kimchi or sauerkraut on a salad.

My favorite salad items are many but must haves include sweet mini bell peppers, sweet corn preferably fresh off the cob, sugar snap peas, and arugula. If I’m being decadent, maybe some avocado and a few greek olives. The dressing I have found I keep going back to is a ranch dressing made with dill. I also enjoy the Teriyaki California Balsamic vinegar for an asian style salad. I found Nutmeg Notebook when watching Chef AJ during the most recent bundle week. Tami’s recipes in the bundle prompted me to watch her YouTube more and the way she speaks was like listening to a friend with a lot of good advice to share, and that is what keeps me coming back. I learned out to make a great salad from watching your YouTube channel 6.5 years ago. We mixup the veggies from time to time, but basically: Romaine, Arugula, Spinach, Baby Kale, shredded Red Cabbage, Apple, Orange, Lemon Juice, Red Onion, Cukes, Tomato, Jalepino, Gosh, whatever veggies I have in the fridge. 😂 We have a wonderful fat free red pepper dressing recipe that we use a Lot. We also love the flavored vinegars, with Peach being my personal favorite. I first went plant based in May of 2018 so 6.5 years ago and luckily for me, found Nutmeg Notebook almost immediately. 2. California Balsamic’s 7-Herb Italian or a mix of their Gilroy Garlic and Lemon. Sometimes I use salso. Stonewall Kitchens make a Mango-Lime and a Peach salsa that have no oil and no added sugar or salt. Sometimes I top it with chili and then don’t need any dressing.
3. Wow. I don’t know how long I’ve been following Tami but it’s been years. It was long enough ago that I purchased their first class, i.e., Mexican Fiesta. I have learned so much from Tami. I sustained a brain injury years ago and needed to learn to cook all over again. Tami has taught me many practical things and her recipes are great. I especially liked learning about batch cooking and batch prepping salads and she introduced me to come of my favorite things – the Instantpot, Souper Cubes, and California Balsomic. I also waste less food thanks to things like her freezer hacks. I could go on and on but I’ll stop here and just day thanks, Tami!

I found a delicious peach flavored white balsamic vinegar at a spice store that is my favorite vinegar, but I also make a runny hummus I use as a salad dressing too.

I absolutely love the Holland Bowls. My favorite vegetables to place in a salad are romaine, arugula and radicchio. I add some celery, red peppers, cucumbers and cooked golden beets. I add corn and then grape tomatoes. My go to salad dressing California Balsamic Persian Lime and I even add more fresh lime. This salad is satisfying and is a very filling lunch since I also add some oat groats and black beans too!

3. I’m new to Nutmeg Notebook and excited to join the community. After Hurricane Helene flooded my home, I’m now moving back into an unfinished house. To make things easier during this transition, I’m planning to batch cook some healthy meals in advance to have quick, nutritious options on hand.

2. My favorite oil free dressing is 3,2,1 dressing. Balsamic, whole grain mustard and maple syrup.

I love a spring mix lettuce with mushrooms radishes, scallions, carrots, celery and red peppers. I like to top it with a citrus dressing with lemon vinegar from California Balsamics. I have been following you since I met you when you were visiting True North in August.
