Sheet Pan Breakfast Potatoes

Delicious potatoes with onion and bell peppers for a nice breakfast side dish or make it a main dish by adding some steamed greens.

Ingredients
  

  • 1 pound gold potatoes, washed, diced or your favorite potato
  • 1 cup red onion diced
  • 1 bell pepper, seeded, diced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt substitute
  • freshly ground black pepper to taste

Instructions
 

  • Preheat oven to 400 degrees. Line a rimmed baking sheet with a silpat mat or parchment paper.
  • In a large bowl combine all of the ingredients and toss well to combine. Spread out on prepared baking sheet. Put in oven and cook for 20-30 minutes or until potatoes are tender.
  • You can add fresh baby spinach or other baby greens if desired. We like to add them to our plate or bowl at the time of serving and let the heat from the potatoes wilt them slightly.
