Oven Roasted Sweet Mini Peppers

Simple easy way to cook sweet mini peppers. Serve as an appetizer or as a side dish or top your salads with some.

Ingredients
  

  • 1 pound sweet mini peppers, washed and dried

Equipment

  • oven, baking sheet

Method
 

  1. Preheat oven to 425 degrees.
  2. Wash sweet mini peppers leave whole and stems intact
  3. Place prepared peppers on a rimmed baking sheet that is lined with parchment paper or a silpat mat.
  4. Bake for 30 - 35 minutes or until light brown spots start to appear.
  5. Remove from oven and let cool. Store in refrigerator in a dish with a lid.
