A mug full of decadent chocolate heaven. So quick and easy to make when the desire for something sweet strikes but you don't want to bake a whole cake. Can be made in a microwave or regular oven.
1/4tspvanilla extract or 1/8 tsp ground vanilla powder
1Tbspchocolate chips for a topping or stir into the batter
Instructions
Put all of the wet ingredients in an 8 or 12 oz mug, add the dry ingredients and stir to combine. Add a few chocolate chips to the batter if you wish. Use a small spatula to scrape down the sides, Sprinkle the remaining chocolate chips on top. Use a paper towel to wipe down the rim of the coffee mug.
Microwave for 40 seconds in a high wattage microwave oven. You will have to adjust the time for your microwave it may take longer. Let cool slightly then dig in with a spoon!
If you don't have a microwave try baking it in your toaster oven at 350 degrees use a mug or an 8 ounce ramekin and bake for 20-25 minutes. Check it at 15-20 minutes - baking time may vary depending on your oven and your choice of baking dish.
Feel free to top it with fresh berries or some banana nice cream.
Notes
When you have all the ingredients out go ahead and make up 2-4 more dry mug mixes and store them in a Tupperware container or a glass container with a tight fitting lid. Then when you are ready to make a mug cake you will have ready made mixes. It is such a time saver. You can take a couple mixes with you when you travel and make them in your hotel room or your Air B & BSubstitutions:You can use nut butter in place of peanut butter powder - it will just be higher in fat.
