So quick and easy to make when the desire for something sweet strikes but you don’t want to bake a whole cake. Built in portion control so you can’t go overboard! You know what I’m talking about!

See how it is still a bit fudgy inside – I love it like that. So moist and chocolatey, the chocolate chips get all melted and its divine.
It is nice to have some of these sweet treats to go to when you want a little dessert other than fruit.
You can use an 8 ounce ramekin like the one shown here. Stir some of the chocolate chips into the batter if you wish and sprinkle some on top.
When you have all the ingredients out go ahead and make up 2-4 more dry mug mixes and store them in a Tupperware container or a glass container with a tight fitting lid. When you are ready to make a mug cake you will have ready made mixes. It is such a time saver. You can take a couple mixes with you when you travel and make them in your hotel room microwave oven or your Air B & B.
I like the date powder from Well Your World. It works well for baking.
Substitutions:
You can use nut butter in place of peanut butter powder – it will just be higher in fat. Or sub more oat flour
You can use plant based yogurt or mashed banana in place of applesauce
Variations:
You can add shredded coconut, nuts or chocolate chips to the batter
Try adding 1 – 2 tsp of dandy blend for a fudgy mocha mug cake
Add a dash of peppermint extract or almond extract
Add 1 tsp orange zest
You get the idea – change it up the way you like it.
Easy Fudgy Chocolate Mug Cake Vegan / Gluten Free
Ingredients
- 3 Tbsp oat flour
- 1 Tbsp Peanut butter powder or peanut butter
- 2 Tbsp Cacao, cocoa or carob powder
- 1/4 tsp Baking powder
- 2 Tbsp Date sugar
- 2 Tbsp Applesauce or mashed banana
- 3 Tbsp Plant milk
- 1/4 tsp vanilla extract or 1/8 tsp ground vanilla powder
- 1 Tbsp chocolate chips for a topping or stir into the batter
Instructions
- Put all of the wet ingredients in an 8 or 12 oz mug, add the dry ingredients and stir to combine. Add a few chocolate chips to the batter if you wish. Use a small spatula to scrape down the sides, Sprinkle the remaining chocolate chips on top. Use a paper towel to wipe down the rim of the coffee mug.
- Microwave for 40 seconds in a high wattage microwave oven. You will have to adjust the time for your microwave it may take longer. Let cool slightly then dig in with a spoon!
- If you don't have a microwave try baking it in your toaster oven at 350 degrees use a mug or an 8 ounce ramekin and bake for 20-25 minutes. Check it at 15-20 minutes – baking time may vary depending on your oven and your choice of baking dish.
- Feel free to top it with fresh berries or some banana nice cream.

Thank you for this recipe! I’m cooking for one so it is nice to have a single serving. I used half carob and half cocoa powder. I’ve been baking with chickpea flour so I used that. It worked well but the cake was a little dry on the bottom. I will experiment with more soy milk or shorter cooking time next time. The flavor is just what I was looking for. I will be making this often!

Chickpea flour is different from oat flour so you will need to adjust the liquid accordingly. I am glad you liked it!
