Method
- Put all of the wet ingredients in an 8 or 12 oz mug, add the dry ingredients and stir to combine. Add a few chocolate chips to the batter if you wish. Use a small spatula to scrape down the sides, Sprinkle the remaining chocolate chips on top. Use a paper towel to wipe down the rim of the coffee mug.
- Microwave for 40 seconds in a high wattage microwave oven. You will have to adjust the time for your microwave it may take longer. Let cool slightly then dig in with a spoon!
- If you don't have a microwave try baking it in your toaster oven at 350 degrees use a mug or an 8 ounce ramekin and bake for 20-25 minutes. Check it at 15-20 minutes - baking time may vary depending on your oven and your choice of baking dish.
- Feel free to top it with fresh berries or some banana nice cream.
Notes
When you have all the ingredients out go ahead and make up 2-4 more dry mug mixes and store them in a Tupperware container or a glass container with a tight fitting lid. Then when you are ready to make a mug cake you will have ready made mixes. It is such a time saver. You can take a couple mixes with you when you travel and make them in your hotel room or your Air B & B
Substitutions:
You can use nut butter in place of peanut butter powder - it will just be higher in fat. Or sub more oat flour
You can use plant based yogurt or mashed banana in place of applesauce
Variations:
You can add shredded coconut, nuts or chocolate chips to the batter
Try adding 1 - 2 tsp of dandy blend for a fudgy mocha mug cake
Add a dash of peppermint extract or almond extract
Add 1 tsp orange zest
You get the idea - change it up the way you like it.
