Blender Sheet Pan Pancakes - Vitamix

A quick and easy pancake made easily in the Vitamix Blender and baked in a pan in the oven.

plant Milk

apple cider vinegar

banana, very ripe peeled

date powder or date sugar, optional

vanilla extract or 1 tsp vanilla powder

baking powder

tsp
ground cinnamon
1/4
tsp
freshly grated nutmeg
Garnishes
Fresh or dried fruit, chocolate chips, raisins nuts or coconut
Instructions
Preheat oven to 425 degrees. Line a 10 x 15 rimmed baking sheet with parchment paper.
Pour vinegar into the plant milk, stir and set aside.
In blender container blend rolled oats into a flour, empty into a bowl and set aside.
Add the plant milk mixture and the banana to the blender container, add the oat flour and the rest of the dry ingredients. Blend until well combined.
Pour batter into the prepared baking pan. Spread batter evenly across the pan so it will all bake at the same time.
Top with fresh fruit like berries, or bananas, or dried fruit, or leave it plain.
Bake for 15 - 20 minutes checking with a toothpick - insert the toothpick and it should come out clean if pancake is done.
Cut into squares or small strips for the kiddos to dunk in syrup. Serve with maple syrup, date syrup, nut butters, blueberry sauce or jam.
Notes
To warm up place in a toaster, toaster oven or a microwave oven.
This same batter can be used to make pancakes on the stove top too.
