Vegan Sheet Pan Pancakes / Vitamix

Have you heard about Sheet Pan Pancakes? Our daughter makes them for her family of five because it is such a time saver. Everyone gets hot pancakes at the same time. Why didn’t I think of that when I was feeding a family? Get used to square pancakes because this method is so easy – you will soon be making them this way too.

You can decorate the tops with fresh fruit, dried fruit, chocolate chips, coconut or chopped nuts.

The batter is made in the blender. Process the rolled oats into a flour and mix together with the rest of the dry ingredients and the wet for a delicious easy pancake batter.

This is such a time saver and they turn out fabulous!

You can cut them into small or large squares.

You can even cut them into little squares for finger food. Nice little snacks or dessert served hot, cold or room temperature.

Vegan Sheet Pan Pancakes

A simple blender pancake batter that is baked in the oven. Quick, easy and delicious.

Ingredients Method Notes

Ingredients
  

  • 2 3/4 cups rolled Oats
  • 2 cups plant Milk
  • 1 tbsp apple cider vinegar
  • 1 banana very ripe peeled
  • 1/4 cup date powder or date sugar optional
  • 2 tsp vanilla extract or 1 tsp vanilla powder
  • 1 1/2 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
Garnishes
  • Fresh or dried fruit, chocolate chips, raisins, nuts, shredded coconut, maple syrup, date syrup or blueberry sauce.

Method
 

  1. Preheat oven to 425 degrees. Line a 10 x 15 inch rimmed baking sheet with parchment paper.
  2. Add apple cider vinegar to plant milk, stir and set aside.
  3. Blend rolled oats in the blender to turn them into a flour.
  4. Add the milk and vinegar mixture as well as the rest of the ingredients. and blend until smooth.
  5. Pour batter into prepared pan, and spread it out evenly.
  6. Garnish with fruit, raisins, coconut, chocolate chips etc. if desired or bake them plain and add garnishes after baking. Bake for 15-20 minutes.

Notes

These can be frozen in freezer safe bags or containers.

    Made these last night. Exactly the help i needed to fix my “pancake cake” i used to make before going WFPB. Since transition in 2020 my cakes were still way to gooey inside. Now i know, higher temp, thinner cake. I did double, so used a larger sheet pan, topped with frozen blueberries and baked for 35 minutes. Wonderful.

    Hi Tammy, I’m curious if you have used the vitamix one. On Facebook you recommended for college students. Is that only for smoothies? I would like to buy as a gift for a student but for the sole purpose of grinding cashews smooth for dressing recipes.

      I have not used the Vitamix One. Yes, you can use cashews in it with liquid for salad dressings. It is a perfect for small spaces, college students, making smoothies, salad dressings, frozen desserts, simple food prep and dips and spreads.     Made my first sheet pan pancakes tonight. So delicious! Heading out on a trip tomorrow and needed a breakfast I can pack for the next day. They are so good, I ate almost half the pan right out of the oven. Topped with strawberries, pineapple, bananas, pecans, walnuts, and 85% dark chocolate chips. Every square is so yummy. Thank you so much for sharing this very appealing recipe.

    I don’t suppose you’d be interested in posting the calorie counts of your recipes? I know you don’t count calories but it would be nice to know.

      Hi Trish – I just don’t have time to enter all of the ingredients into a calorie counting program to determine the nutritional content. There are free apps or on line programs that you can use to enter the ingredients to calculate that information if you would like to have it. At this time we don’t plan on providing nutritional information.

    I used maple syrup instead of the date powder/sugar because that is what I had on hand. I have made this recipe three times. It is always a huge hit. This last weekend it went over so well with guests Saturday morning they asked me to make it again Sunday morning!
