Peanut Butter Banana Nice Cream

Tastes like a peanut butter cup on a spoon! Simple ingredients that transform into a delicious
frozen treat that the entire family will enjoy.

Ingredients
  

  • 4 frozen bananas, very ripe, peeled
  • 1/4 cup plant milk, I used JOI oat milk
  • 3 tablespoons peanut powder, no added salt or sugar
  • 1/8 teaspoon vanilla powder or vanilla extract

Equipment

  • High powered blender or food processor

Method
 

  1. Put all ingredients in blender or food processor fitted with an S blade. Process until smooth and creamy.

Notes

Substitutions:
Bananas -  you can try freezing oven roasted, peeled and diced or mashed Japanese Sweet Potatoes or Hannah Yams. They are not as sweet as very ripe bananas, so you may need to add some date paste, date syrup or date sugar to taste. I have not tried this so I don't know how it will turn out.
Oat milk - use any kind of plant milk that you like.
Vanilla Powder - vanilla extract.
Peanut Powder - peanut butter but of course it's going to be much higher fat.
Peanut Butter Chocolate Chip Variation: After the nice cream is smooth and creamy add 2 tablespoons chocolate chips and use the pulse function to incorporate them.
