Apple Cranberry Crisp & CorningWare Giveaway

Happy Monday! This Apple Cranberry Crisp has been made twice now and served to guests who raved about how good it was! I love combining sweet apples with tart cranberries plus the contrast in color is lovely. Oats, oat flour, maple syrup, cinnamon, nutmeg, walnuts and a couple surprise ingredients brings the crisp topping together without using any traditional fats or dairy products.

Apple Cranberry Crisp

The secret ingredients in this crisp recipe are cashew butter and applesauce! They work perfectly to replace butter and are neutral in flavor so you wont’ even detect any difference. I wish I could take credit for the brilliant idea to sub cashew butter for dairy butter but I owe the magic to Isa Moskowitz from Post Punk Kitchen. I wanted to revamp my very own Cranberry Apple Crisp recipe and make it plant based/vegan friendly and when I saw Isa’s recipe for a fruit crisp in the Forks Over Knives cookbook I saw how easy it would be. Cooking the plant based way is different but once you get the hang of it, you realize how simple it is. I didn’t have any cashew butter on hand so I made some in my Blendtec blender in just minutes. Cashew butter is sold at health food stores, Whole Foods and some grocery stores and will be located on the shelves near the peanut butter.

CorningWare French White Flare Design

How many of you have CorningWare in your kitchen right now? I have been using their products for over 30 years – yes I just aged myself. It lasts forever, cleans up like a dream and it looks good on the table. What more could you want? Well you might want some of their new pieces with the flair design with handles. It comes in the French White which happens to be my favorite color for dishes. Food looks amazing when framed by white dishes –  it goes with every holiday and it looks professional and clean. The new design blends easily with any French White dishes you already have. I have a whole set of French White casserole dishes that I use all the time – they are amazing and look just as good today as the day I bought them.

Apple Cranberry Crisp

I was contacted by World Kitchen and asked if I would like to receive a sample of their new CorningWare French White Flare design 2.5 qt casserole dishes with handles. I didn’t hesitate for a moment about saying yes. They also sent along a gift card to buy the ingredients to make a healthy recipe to share with my readers. Imagine my surprise when the box arrived and contained not one but two of the casserole dishes, with glass lids and plastic lids for each one!  CorningWare is safe for the microwave or the oven and since its made from non-porous stoneware it will not absorb food odors, flavors or stains. I love how easy they clean up too. Use the glass lid for keeping things piping hot on the serving table. The plastic lid is so handy for storing leftovers in the fridge and since it’s flat it allows you to stack things on top of it – a real space saver. Apple Cranberry Crisp Vegan/Plant BasedThe handles on the new CorningWare dishes are great when handling the hot casserole dish getting it in and out of the oven.  I won’t be using the dishes strictly for hot dishes they will also be perfect for serving up cold salads, fruit salads, holding fresh fruit on the counter, filled with cookies, scones, dinner rolls, chopped fresh veggies with a bowl of dip to take to a pot luck or holding a wide assortment of goodies on a buffet table.

Apple Cranberry Crisp   Vegan/Plant Based

Filling

  • 2 pounds apples, peeled, cored, diced – I used gala and fuji
  • 1-2 cups cranberries – I used frozen, use 1 cup if you don’t like it too tart, use 2 cups if you like the tartness
  • 1 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • 1/4 teaspoon freshly grated nutmeg -optional but oh so good
  • 1 tablespoon fresh lemon juice
  • 1/4 cup real maple syrup – adjust depending on how sweet the apples are – you can use up to 1/2 cup if needed.

Topping

  • 1 cup old fashioned oats
  • 1/3 cup oat flour – you can grind up old fashioned oats in a blender or food processor measure after grinding
  • 1/4 cup chopped walnuts
  • 1 teaspoon cinnamon
  • 1/8 teaspoon freshly ground nutmeg – optional
  • 1 teaspoon vanilla extract
  • 2 tablespoons cashew butter
  • 2 tablespoons unsweetened apple sauce
  • 1/4 cup real maple syrup

Preheat oven to 350 degrees. Spray 2.5 qt casserole dish with non stick spray.

For filling:

In a medium size bowl combine prepared apples, with cornstarch, cinnamon and nutmeg, add lemon juice and maple syrup stir to combine and pour apple mixture into prepared casserole dish.

For topping:

In a small bowl combine oats, oat flour, walnuts, cinnamon and nutmeg, stir to combine. In a small separate bowl using a wire whisk combine vanilla extract, cashew butter, apple sauce and maple syrup – whisk until smooth, add to dry ingredients and stir with a fork until its well combined. Spread topping evenly over the apple/cranberry mixture. Bake for 40- 50 minutes in preheated oven or until apples are fork tender.

Serve warm with your favorite non dairy frozen ice cream or banana soft serve. Delicious!

Per 8 Servings: 235 Calories, 5.2 g Fat, o mg Cholesterol, 1.8 g Sodium, 7 g Fiber, 2.8 g Protein, 45.5 g Carbohydrates

Per 6 Large Servings: 313 Calories, 6.9 g Fat, 0 mg Cholesterol, 2.4 g Sodium, 9.3 g Fiber, 3.8 g Protein, 60.6 g Carbohydrates

This recipe is my standard Cranberry Apple Crisp recipe revamped to be plant based/vegan by using maple syrup in place of sugar, cashew butter and applesauce in place of butter and oat flour in place of wheat flour.

    Here you are making all these healthy, wonderful dishes and I see that casserole dish and think “what kind of dessert can I make in this?” haha In my defense though, I was thinking of an apple crisp. It’s healthy if it has fruit, right?! 🙂

    Hi!!! I would love to make this apple crisp in a new corning ware dish, but I also found a “cheesy” vegan broccoli rice casserole that is out of this world that would fit nicely in this dish.     Love the recipe. I am anxious to try the cashew butter as a sub for non-dairy. That opens a lot of doors.

    I use casserole dishes like this in my slow cooker for water bath oats. They work great for that.

    Love the crisp, too. Cashew butter is sooooo good. I just wish it weren’t so expensive.
