Sweet Potatoes Air Fried in the Breville Smart Oven Air

We follow a starch based food plan which means we get to eat a lot of potatoes and sweet potatoes. That is why I am frequently experimenting with different ways to eat sweet potatoes. My favorites are Japanese Sweet Potatoes and Hannah Yams. Today I am excited to share a couple different ways we enjoy these amazingly delicious sweet potatoes.

Although this is quite easy to make I thought you might enjoy seeing a video of me making it. Like they say a picture is worth a thousand words.

Japanese Sweet Potatoes and Hannah Yams are perfectly lovely simply baked in the oven. In fact they are a regular part of our weekly Batch Cooking. I usually eat one sweet potato a day and never tire of them. I wanted to make a dessert one night and when I looked around at what I had to make something with I came up with this combination that we have enjoyed many times. The Breville Smart Oven Air Fryer crisps up the sweet potato skin and the banana and apple cook a little, the cinnamon or gingerbread spice adds a lovely flavor and makes the kitchen smell divine. To guild the lily a drizzle of California Balsamic Pomegranate Balsamic vinegar is a nice touch. Any flavor of Balsamic vinegar will work here – pick one of your favorites – I like the fruit flavors for this recipe. I make these air fried Japanese Sweet Potatoes and Hannah Yams all the time in the Breville Smart Oven Air Fryer. It’s wonderful on top of a Chopped Salad. It can be a side dish at lunch or dinner topped with some Taco Lentils or BBQ Lentils, Red Lentil Chili or with a veggie burger and corn on the cob. Simply sprinkled with cinnamon you have dessert! Sweet Potato Apple Fritter

1 Japanese Sweet Potato or Hannah Yam baked cold from the fridge

1 ripe banana – sliced

1 apple cored and sliced

Cinnamon or gingerbread spice

Use a cold baked sweet potato from the fridge. Cut it in half and using the palm of your flatten the potato half – repeat for both halves. Next cover the potato halves with banana slices, then a layer of apple slices. Sprinkle the top with cinnamon or ginger bread spice. Place each half on the air frying rack. Place in a cold air fryer set to 400 degrees for approximately 18 minutes – check it at 15 and watch closely so the apples don’t get too done. Serve warm or chilled. Delicious! It reminds me of an apple fritter!

Air Fried Scored Sweet Potato

1 sweet potato of your choice, Garnet, Japanese or Hannah

Cinnamon if desired

Take a prebaked sweet potato cold from the fridge. Cut it in half and then score it crosswise. Place on air fryer rack and place in a cold air fryer set to 400 degrees for 20 minutes. How long it takes to get brown will depend on the size of the potato and how much moisture it has. Check on it around 15 minutes and watch closely – remove it when it’s lightly brown and the skin is crispy.

      Hi Janet,

      I don’t know because I always cook my sweet potatoes in the oven. Give it a try and see – consider it a little experiment! I am thinking the sweet potatoes cooked in the IP are going to be much softer but since I haven’t tried it I can’t say for sure how it will turn out.

      Hi Joann,

      That is a tough decision! I do use both of them every day. Chopped salads are more important to me than air frying I guess because I eat a chopped salad every day for lunch and I love my salads chopped so much more than a regular salad. So if I had to choose one I would choose the bowl and save for the Breville!

      Hi Bobbie,

      In our experience it works best to use cold already baked potatoes. Bake them how you normally would and refrigerate them. When cold cut them into fri shapes – steak fries size seems to work best then put in the air fryer set at 400 degrees and watch them – set the timer for 20 mintues but it might take longer than that depending on the size and how much moisture they have.

    Where do you buy Hannah yams? I am in southern California. I look for them wherever I shop but can’t find them. You and Chef AF talk about them and I would love to try them, even if I have to buy online.

    I just purchased a Breville Joule Air Fryer and am so excited to get going!. I am trying lattice sweet potato chips right now!. To small batch bake potatoes in the Breville on the bake setting, do you use a quarter sheet pan with a silpat liner? Also how many racks/which levels do you bake them on. I am not totally plant based, so I do not need to cook them in my big convection oven. I was just watching your batch baking video with potatoes and winter squash and you mentioned that you did your Yukon Gold potaotoes in the Breville, it looked like more than one tray full… Thanks so much!

      Hi Beth,

      I use a 10 x 15 jelly roll pan from OXO in the Breville lined with parchment paper. I use the bake setting for baking my potatoes so use the level as indicated on your glass door for baking. I set the temperature to 400 degrees – no convection just regular conventional bake and how long depends on how big the potatoes are. They are done when pierced with a fork or knife it is soft and easy to pierce. I only bake one tray at a time. If you line the air fry rack you can fit more potatoes on it then on a small baking sheet – that is another option that works as well.
