This is amazing and so easy. A simple recipe of fresh or frozen berries, a little water and chia seeds all heated up results in this lovely berry jam. The chia seeds help it thicken as well as add some fiber, protein and health fats.This is so yummy you will lick the spoon and go back for more! Perfect for topping oatmeal, muffins, waffles , a roasted sweet potato or banana nice cream.
Chia Berry Jam
- 2 cups frozen berry mix (I buy the one from Costco)
- 1/2 cup water
- 1/4 cup chia seeds
- 1/4 teaspoon vanilla bean powder or vanilla extract
- a dash of cinnamon, nutmeg or some lemon zest – optional
In a medium size sauce pan combine all the ingredients together, stir to mix and cook over medium heat until bubbly. Turn off and serve warm or chill in the fridge. (you can also put this in a large glass dish and microwave it for 2-3 minutes – be careful as it can boil over)
