Nourish Bowl – Comfort Food

One summer  we traveled around the beautiful North West and a bit of Canada. Although we ate a lot of our own food from the cooler I scouted out some wonderful vegan restaurants as well. A common menu item that we encountered again and again was called a “Nourish Bowl or Love Bowl.” The name alone caught my attention – it just sounds perfect for a foodie who wants to eat healthy! Although there were some differences from one restaurant to another in the make up of this simple delicious meal the basics were the same. A nice deep bowl was filled with a grain, beans, some greens and some type of sauce. I always asked for balsamic vinegar on the side and then would generously pour it over the contents of my bowl.

You can be as creative as you desire with your Nourish Love Bowl. Top it with a fancy salad dressing, a flavored vinegar, an Asian ginger sauce, a tangy lemon sauce, salsa or perhaps you prefer the simplicity of balsamic vinegar. Your body will indeed feel nourished and satisfied. The Love Bowl pictured above was enjoyed at Be Love, Victoria Island. It was such a wonderful meal that we went back a second time to enjoy it all over again.

I have recreated the Nourish-Love Bowl many times at home since our vacation. This one is steamed brown rice, home cooked pinto beans and power greens from Costco. This bowl started with cold leftovers so after I took this photo I covered the bowl and heated it up in the microwave so it steamed the greens as the same time. Before serving I gave it all a generous pour of balsamic vinegar.

Nourish-Love Bowl

1/2 – 1 cup of your favorite cooked grain – brown rice, quinoa, barley, millet…

1/2 – 1 cup of your favorite cooked beans, black, pinto, kidney, black eyed peas, chickpeas…

1/2 – 1 cup or more of your favorite cooked greens, kale, spinach, collards, power greens…

Balsamic Vinegar

Nestle the grains, greens and beans in a deep bowl and if starting with already hot ingredients simply douse them with a generous pour of vinegar and serve. If they are cold leftovers, cover the bowl and gently heat it in the microwave until warm, pour the vinegar over the top and enjoy.

Lovely. Nourishing. Simple. Economical.

    Love this easy meal. Last night I sautéed kale with mushrooms, olive oil, garlic, and salt. Then I drizzled with some lemon juice. Served with quinoa and black beans and topped with some tahini dill sauce. Delicious!
