Watermelon season is upon us and that makes me incredibly happy. We are already on our third melon for the season. We will enjoy watermelon all summer long. The grandchildren recently helped me make watermelon popsicles that are so refreshing. You don’t have to be a kid to enjoy these but they might make you feel like a kid again!
These only have two ingredients – watermelon and fresh limes. They are so tasty – refreshing and pure joy to eat.
You will need some popsicle molds and this recipe makes 10, 3 ounce popsicles. I have two types of popsicle molds and both work well. I will post a link to them below.
Four cups of ripe, sweet watermelon, cubed – so you can you measure it. Or about 40 ounces if you have a food scale and don’t want to cube it.
Zest and juice from 2 limes. Zest them first using a microplane. Just remove the green not the white underneath as it is bitter. After zesting them, squeeze out the juice.
I didn’t get any photos of the pouring of the mixture into the tray – I was too busy with 3 little ones under the age of 5 “helping” me with that process! If you have leftover watermelon lime juice mixture pour it over some ice and enjoy it as a refreshing beverage. Add a little mint for a slightly different flavor.
We thought they were beautiful as well as delicious. I love the galvanized tray and utensil holder. They are perfect for outside dining and serving. I will link to some below. Place crushed ice in the tray and place the popsicles on top for a cute way to serve them to a crowd without having them melt right away. Just make sure your tray is water tight.
The popsicle mold – set I bought, came with the little bags for freezing. These are so cute and perfect for storing in the freezer. It frees up the popsicle tray so you can make more.
I use a freezer organizer tray to stand them up, for freezer storage. We are now ready to try some new flavors. I’m thinking something chocolate will be on the list.
Watermelon Lime Popsicles
Equipment
- Blender, zester, juicer, citrus squeezer, popsicle molds
Ingredients
- 4 cups cubed seedless watermelon or 40 ounces
- 2 each limes, zested and juiced
Instructions
- Put everything in the blender and process until smooth.
- Pour into popsicle molds.
- Freeze according to the instructions for your style of molds.
- For my red silicone tray – it says to freeze for one hour before inserting the wooden sticks. Then freeze for another 4 hours or until firm. How long will depend on your molds and your freezer. I recommend freezing them over night.
- Once frozen solid, remove from the molds and place in freezer baggies so the mold is now free to make more flavors.
- Optional: My family isn't fond of mint but I think a little fresh mint would be lovely in the popsicles. Maybe not for the children – but I think adults would like it.

Lucky people who live in California need a reality check. For most of us, watermelon doesn’t come into our marketd until late summer.

My mom who lives in Nebraska is already purchasing watermelons at her local grocery store. They are available as they are imported from Mexico. If you are growing your own it won’t be until late summer – that is true! Happy Summer!
