Carrot Ginger Soup – Vitamix

The ever humble carrot gets transformed magically into the most lovely, velvety cream soup right in a Vitamix blender. This is a vegan recipe that uses no dairy, no oil, no salt and no nuts! Roasting the carrots, onions and garlic, gives it a real flavor boost. An oven roasted sweet potato adds another level of sweetness, flavor and works as a thickener as well as adding a creaminess. A little fresh ginger root and a dash of curry powder give it a little extra zing. This soup is simply packed full of home made goodness!

Not only is this a scrumptious soup – the color is gorgeous!

When made in a high powered Vitamix Blender, it works it’s magic, turning this into a velvety smooth texture and at the same time it heats the soup! It can be served piping hot right from the blender. Isn’t that awesome? The Vitamix Blender saves me time and money because I can make amazing creamy dressings, sauces, smoothies and soups whenever I want to.

Carrots are a rich source of beta carotene, fiber, vitamin K1, potassium and antioxidants. Carrots are a root vegetable and are best known for their orange color. However, carrots also come in other colors such as purple, yellow, red and white. I have only used the orange colored carrots for this soup and I love how vibrant the color is. This is a perfect soup for a whole food plant based lifestyle.

I have been making this soup a lot lately. It has just the right amount of ginger and curry powder for me. Of course recipes are just ideas, so feel free to add more spices or use less to suit your personal taste preferences. Let the Vitamix Blender do most of the work for you.

I love to serve it in a mug and enjoy it along with a chopped salad. A little fresh chives on top looks pretty and adds another layer of flavor. Roasting the vegetables for this simple soup makes a difference in it’s depth of flavor, proving, that you don’t need a long list of ingredients to have a flavorful dish.

Equipment

  • Vitamix Blender

Ingredients
  

  • 12 oz carrots, washed, sliced in half or quarters
  • 1/4 cup yellow onion, about 1/4 of a small onion
  • 1 large garlic clove, peeled
  • 1 tsp fresh ginger, grated
  • 1/4 tsp curry powder
  • 1/2 cup Sweet Potato, oven roasted, skin removed
  • 2 cups vegetable broth

Instructions
 

  • Preheat oven to 350°
  • Cut the carrots in half or quarters and place on a baking sheet lined with a silpat mat or parchment paper along with the onion and garlic clove. Roast for 30 minutes or until vegetables are tender.
  • Place the roasted vegetables and all of the rest of the ingredients into the blender container and secure the lid. Start the blender on its slowest speed, then quickly increase to it's highest speed. Blend for about 5 minutes and 45 seconds, or until heavy steamis escaping through the vented lid.
  • The soup will be hot and ready to serve. Pour into mugs or a soup bowl. Optional garnish can be fresh chopped parsely or fresh chopped chives.

Notes

Serving Suggestions: 
Garnish with fresh herbs like parsley or chives.
Add a little cooked wild rice or qunioa to the bowl, top with a little chopped arugula.
Can be served in mugs or soup bowls.

    This was a delicious soup, and the first time I have made soup in my vitamix. It was very thick and i added extra broth so it could spin. I also added a squeeze of lemon and it was great. Will make again and again. Thank you Tami!!
