If you follow me on the Nutmeg Notebook Instagram account or facebook you have seen my photos of what I have dubbed “BBS” – big beautiful salads! Hubby Tom and I love these giant salads that are indeed a full meal. When I first transitioned to a whole food plant based diet I was following a lot of Dr Furhman’s principals and one of them is to eat a big salad as a meal. We don’t do this every day but we do make it for a few meals each week. Since I received such good feedback about my first video I decided to make another. This time we used a better camera and I used the proper settings to put it on You Tube and I am happy with the results. I hope you enjoy the video and make yourself a “BBS.”

We love the Creamy Balsamic Dressing that is oil, salt and nut free! I use white beans instead of nuts to make this and you would never know it has beans in it. It’s been a big hit with my plant based friends! I have also fed it to people who don’t follow a plant based diet and they liked it too! Here is a link to the Creamy Balsamic Dressing.

A Little Nutmeg Nugget: When I started this blog in January of 2010 I followed what I understood to be a healthy version of the standard American diet, ironically also known as the “SAD” diet. As interest in my own health and how it was affected by the food I ate evolved, I transitioned to a whole food plant based diet also known as “WFPB” diet. I have wrestled with the fact that this blog still contains all those posts and recipes from the SAD way of eating I have left behind. I no longer advocate for anyone to eat that way. At this time I am leaving those recipes and posts here. It is a record of my journey and how I came to follow a WFPB way of eating. It is my hope that those who still come here for those old recipes will be curious about what I am doing now. Perhaps they will dip their toes across the line as I did and try some plant based recipes and learn more about the health benefits.

That salad looks delicious! It sure must take a long time to eat though! Do you tend to eat the same quantity of vegetables again for dinner?

Hi Jenny, Yes it does take a long time to eat that salad! How much I eat differs from day to day depending on my activity level and so on. I just eat until I am comfortably full and some days that is more food than other days.

Love your BBS video. Yummy salad. I should try more fruits in my salads. I usually prefer non sweet at dinnertime. I don’t gain weight easily and eat some nuts so usually use spoonful of cashew cream mixed with white balsamic for dressing.
I’d like a video detailing examples of what you and your husband eat on a daily basis for breakfast, lunch, dinner and snacks. Thanks!

You’re so lucky to have a big beautiful kitchen, large appliances and best of all: counter space! I live in a small one bedroom apartment with a cramped kitchen andh very little counter space. It’s not so easy to be as organized as you with crummy conditions like mine. But please keep posting the videos and I’ll just watch in envy!

I am blessed to have such an amazing kitchen! I will tell you that Chef AJ lives in an apartment and has a tiny kitchen but she batch cooks like a queen!
