South Of The Border Give-A-Way!

As many of you know I am a huge fan of Chef AJ who is a Culinary Queen in the plant based world. Her recipes have been on my favorites list for a long time. So it’s very exciting for me to have been given a sneak preview of the recipes coming out in her newest cooking webinar “South Of The Border Party – The best of AJ!” Plus Chef AJ is going to give one of my lucky readers free access to this fabulous cooking webinar! Mexican-Southwest food is my favorite ethnic food – so I couldn’t wait to make her newest recipes. Saturday my daughter Katy and baby Alma came over and we had a major cooking session working our way through the new recipes. Its so much fun to have company in the kitchen and a day spent with my girls  – well it doesn’t get any better than that. After our morning in the kitchen we were rewarded with a wonderful South of the border feast and enough leftovers for both of us to enjoy in the days to come.

These All Star Tostados in homemade shells were spicy and delicious! The vegan “chorizo” like filling can be used in multiple ways – tacos, burritos, enchiladas, taquitos and taco salad here we come! I love the crunchy shell – made with no oil – you will find out how to make these in the webinar. We filled our shells with the Chorizo mixture and topped it with some of the Almost Instant Mexi-Cali Rice and the Easy Chipotle Corn Salsa – (both recipes are included in the new webinar)- a few sliced green onions and a squeeze of fresh lime juice. Let the party begin! You could make a double batch of this recipe and feed a crowd. Set up a buffet and let everyone create their own favorite combination of ingredients.

It’s a feast for the eyes. Picantes y deliciosas!  Spicy and delicious! Chef AJ has a cooking show on Foody TV and you can watch the episodes on your computer or other electronic devices. I have been following Chef AJ’s Ultimate Weight Loss Program since February 2015 and her program is what finally helped me get back into my size 4 clothes!  I eat like a veggie queen with all of her easy yet scrumptious recipes.

This is the best Mexican Rice I have ever made! It was just the right amount of heat and I loved the flavor profile. It was easy to prepare too which is a huge bonus – no one wants to be in the kitchen longer than you have too. That is one of the things I love about Chef AJ’s recipes – she has perfected her cooking techniques and makes her recipes as simple as possible with out sacrificing flavor.

This will probably be the easiest salsa recipe you will ever come across. I could eat a bowl of it as a meal all on it’s own! You can kick up the heat or keep it mild and it gets even better as it sits in the fridge. I don’t know about you but I look forward to leftovers. I usually double recipes just so we will have extra to eat from for a few days or enough to freeze for meals a few weeks later.

After all that spicy food you will love to cool down with a dish of this Fresh Homemade Strawberry Ice Cream that is dairy free, soy free, nut free, no sugar added – yet insanely scrumptious! I kid you not – it’s amazing! You can even scoop it up with an ice cream scoop and serve up one, two or three scoops! Frozen desserts are incredibly difficult to photograph because they start to melt so quickly but you can still see that it does have the texture that allows you to scoop it! I had some left over so I popped it in the freezer. Usually the vegan versions of ice cream don’t have a good texture after being in the freezer for a while – they get kind of hard and icy. I let it thaw out a bit – gave it a stir and it was still nice and creamy. We will be enjoying this treat all summer long!

I was hoping that Chef AJ would come up with some more recipes for the dehydrator and she developed these Tropical Treat Cookies! They are super crunchy and have a lovely tropical flavor. That little bit of coconut sprinkled on the top is the perfect addition to these little gems. Now you can have cookies and ice cream! Chef AJ truly has out-down herself with this group of recipes!

The only recipe I didn’t get made yet was the Nacho Cheeze Kalerito Chips! Doesn’t that sound enticing? I have all the ingredients to make them so hopefully this week that can happen. I will post a picture on my Nutmeg Notebook Instagram account or my Nutmeg Notebook facebook account. Be sure to follow me on both of those!
