A light and refreshing traditional Mexican beverage often seen in Mexican restaurants. The perfect creamy beverage to cool off with on a summer day, yet special enough to serve during the holiday season and since it is alcohol free, it’s perfect for the children to drink as well. It all begins with rice milk that is delicately sweetened with dates, cinnamon and vanilla. Enjoy at breakfast, lunch, dinner or even the cocktail hour. Our friend Nick Davoren from Local Spicery taught us how to make this vegan date sweetened horchata as well as giving us a tutorial all about cinnamon. We have the recipe and the video to share with you below.

A few key ingredients creates a lovely, light and refreshing beverage. It tastes a lot like a yummy rice pudding!
Easy to strain the rice milk using a fine mesh sieve.
At this point you can go ahead and drink it. I did see some recipes that say if you are patient enough to put it in the fridge after blending and before straining and let it sit for 24 hours it will become even creamier.
I did not have the patience to wait and we drank it right away and it was heavenly.
Delicious doesn’t have to be complicated.
Medjool dates, ground cinnamon, ground vanilla bean and long grain white rice. You can order your Local Spicery spices on line and have them shipped to your home.
We had a wonderful demonstration of the horchata recipe by our friend Nick Davoren from Local Spicery. He also shared all about the different types of cinnamon and which ones are best for what type of recipes. It was so interesting.
You can use long grain brown rice too – uses the ingredients you have in your pantry. If you don’t have Medjool dates use what ever kind of dates you have. Be sure to pit them first! Adjust the quantity to suit your personal taste preferences. Celyon Cinnamon and Vanilla Powder make this drink taste amazing.
I’m so happy to have this new recipe to share with family and friends and hope that you love it as much as we do. We adore the old fashioned look of the Bormioli Rocco Glass Frigoverre glass pitcher with its air tight lid. We use it for our plant milks that we mix up ourselves using JOI milk bases. I read on line that it can last up to a week in your refrigerator. Of course how long things can last in the fridge is so variable depending on so many factors. It can also be frozen, then thawed and enjoyed. Try making popsicles with it!

Vegan Horchata – Date Sweetened
Equipment
- Blender
Ingredients
- 3/4 cup long grain white rice – raw – uncooked
- 2 cups hot water
After Soaking
- 4 cups cold water
- 5-7 each Medjool dates – more or less sweet how many dates is up to you use any type of date
- 1 teaspoon Ceylon Cinnamon
- 1/2 teaspoon Ground vanilla bean
- 1 cup unsweetened plant milk
Instructions
- In a bowl soak the rice and hot water for 2 hours
- After 2 hours drain the rice in a fine sieve
- Add rice, cold water, pitted dates, cinnamon and ground vanilla bean to a high powered blender. Blend until rice is well blended with the water.
- Pour through a fine mesh strainer into a pitcher. Add the 1 cup of unsweetened plant milk – this makes it creamier. Put the lid on and chill in the fridge.
- To serve pour over a glass of ice, dust the top with a little cinnamon and serve
- Refrigerate any leftovers. There will be sediment in the bottom of the container, don't try to stir it back in, leave it at the bottom of the container.
- This would make an awesome creamer for your coffee or hot tea.

Super easy and absolutely delicious. I used brown rice and it has “warmer” notes that I didn’t necessarily prefer so I will stick with white rice in the future. My hubby loves horchata so thank you for a WFPB version
