I love making this meal because the leftovers are just as good the second and third day! You can serve this over a bed of salad greens too. It is good hot or cold. We love to take the Mexican Quinoa casserole on a bed of greens in a tupperware container when we go hiking, Why is it that food tastes so fabulous when you are out in nature?
I will show you how to make “Beanwah” – also known as Mexican Quinoa Black Beans & Corn in the Instant Pot – easy peasy. You can make tacos using this as a filling in corn or flour tortillas. Eat it for breakfast, lunch or dinner.
Tami’s Easy Red Salsa that only takes 5 minutes to make and is a wonderful alternative when we can’t get great tasting fresh tomatoes.
Green Chili Hummus that will knock your socks off! This is a lower calorie density option, in place of guacamole, if you want to cut back on the calories and fat. Perfect for weight loss. It is creamy and flavorful.
Of course, we need a dessert to finish off this meal properly and Chocolate Chia Pudding will make everyone happy. All of these recipes are easy to double to feed a crowd.
