I know what you are thinking, granola or oatmeal cookies without any salt, oil or sugar? Really? Yes really! It can be done and not only is it easy but it’s delicious! We actually recorded this video months ago using the Excalibur dehydrator but just hadn’t gotten around to posting it yet. When Tom finished editing the video, I decided I also wanted to try this recipe using the dehydrator function on my Breville Smart Oven Air. The results were outstanding! Being the good sport he is, he agreed to add in the Breville footage for all of you Breville Smart Oven Air owner’s . Thank you Tom!

You can make the cookies any size. The smaller ones do dehydrate faster. The ones show above were made using a small #70 cookie scoop. See the link to the scoop below.
The cinnamon granola is a fun treat to have on hand. Mix a little with some fresh fruit and your favorite plant milk. Yummy for your tummy.
First step is to scoop out the cookie dough and shape them into circles.
Or if making granola pat it out on the teflex sheet, covering a larger surface area.
This was the half way point – when the cookies and granola were taken off the teflex sheets and put directly on the dehydrator racks.
Dehydrating away quite nicely in the Breville Smart Oven Air that also has a dehydrate function.
So much yumminess! Keep some and give some away!

They make nice little gifts for my plant based friends and family. We used some nice card stock and printed our own tags. Just use a hole punch and some pretty twine for a simple but elegant look.
This recipe uses my Quinoa Banana Oat Muffin Mix. It is very easy to make and keep on hand for so many different types of recipes! In the recipe below for the Dehydrated Cinnamon Oat cookies and Granola, I have eliminated the baking powder that is found in the muffin recipe. Just so you know, I have also used the muffin mix that has the baking powder in it and it works just fine too!

Cinnamon Oat Cookies & Granola – Dehydrated
Equipment
- Dehydrator, teflex sheets, cookie scoop
Ingredients
- 20 ounces mashed overripe banana – about 2 1/3 cups of mashed banana frozen bananas thawed out is fine
- 1 cup unsweetened applesauce
- 1/2 cup Quinoa flakes quinoa flour or prewashed quinoa -dry – uncooked ground into a powder – ground millet or oat flour
- 2 cups Quick Cooking Steel Cut Oats* see note below recipe – can use all old fashioned oats
- 2 1/2 cups Old Fashioned Oats – use certified gluten free oats to make these gluten free
- 1/4 cup ground golden flaxseed meal
- 2 tablespoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon nutmeg – freshly ground is best but pre ground is fine too
- 1 teaspoon vanilla powder or 1 teaspoon vanilla extract
Instructions
- In a large bowl mash the bananas using a potato masher or a large fork. Mix in the applesauce. Add the cinnamon, cardamom, nutmeg and vanilla powder or vanilla extract. Stir until well incorporated. Add the quinoa flakes, quick cooking steel cut oats, old fashioned oats and ground flaxseed meal. Stir until well combined.
- Cover the dehydrating trays with teflex sheets. Using a small or medium size cookie scoop, portion out dough onto prepared trays. Using a small rubber spatula flatten the scoops into cookie shapes being careful not to make them too thin as they will shrink in the dehydrator. See Video for a visual.
- If wanting to make granola spread some of the dough out onto the prepared tray being careful not to make it too thin as it will shrink in the dehydrator. See Video for a visual.
- Place trays in dehydrator according to manufactors instructions for your brand of dehydrator. Set temperature to 155 degrees and set time for 4 hours. Check at 4 hours to see if they are getting dryer and if they can easily be turned over and are not sticking to the teflex sheets then it is time to remove them from the teflex sheets and put them directly on the dehydrator trays. Put back in the dehydrator and set the temperature for 155 degrees and how much longer is going to depend on how moist they still are. Set the timer for 2-3 hours and check them at that time to see if they need to go longer. I usually take one and break it in half to check for doneness. I want them to be dry all the way through. If it's not dry all the way through put them back in for an hour and check again until they are completely dry.
- When they are completely dehydrated remove and let the cookies cool before placing in containers with sealed lids. Break up the granola into pieces before putting it into containers for storage. Enjoy!

* Some people have told me that they use the regular steel cut oats but first they put them in their food processor and using the pulse function they cut the steel cut oats smaller – which is what is done to make quick cooking steel cut oats. So give that a try if you can’t find the quick cooking steel cut oats. Others have told me they use all old fashioned oats with good results.

unfortunately, I do not have a dehydrator. Love the ingredients in this recipe (or rather the lack of certain ingredients), is it possible to bake these in a regular oven and if so, what time and temperature would you suggest? (My baking skills are minimal, so that is why I am not sure)

If your oven goes as low as 155 degrees you could try it but you won’t have the air circulation with the fan moving air like a dehydrator so I don’t know if it will work or not or what the end result will be like. You can experiment with it and see what happens! I only tried this using the dehydrator function on the Breville and in my Excalibur dehydrator so I don’t know what would happen in a regular oven. You could try a small amount and experiment with it – that way if it flops you don’t waste all of the batter and you can still make muffins or one if the other treats with the leftovers. I often start small like that in order not to waste food if it doesn’t work the way I thought it would.

I would purchase the Breville Smart Oven Air because it has multiple uses and functions including air frying, baking, roasting, broiling, toasting and dehydrating. The stand alone dehydrators are wonderful if you want to dehydrate volumes of food items. The Breville dehydrator functions works well – I have tried it but since I have a stand alone dehydrator that is what I use. We have had our Breville for going on 4 years and we use it daily for something. I don’t know how we got along with out it! I use it far more than the dehydrator.

What can I substitute for your quinoa banana oat muffin mix ? As I am allergic to bananas?

Banana oat muffins are based on bananas so if you can’t have bananas I would look for a recipe that doesn’t use them. I don’t know of anything that would be a good substitute for them in this recipe.

I love this no oil, no fat granola. I used my food processor to puree the fruit ingredients. The recipe has given me inspiration to try other fruits with the banana mash as well. Sometimes I add a few dates for extra sweetness. I even pureed a cooked murasaki that I needed to use up into the banana blend one time. Think I might try a batch adding some no fat peanut butter powder. I like making this granola plain and having the option to add nut, seed, fruit goodies to it afterwards. It makes a great portable snack. Love how it turns out in the dehydrator.
