We have all seen the deep fried crispy tortilla bowls that are served up in restaurants and some of us have even indulged in them! They do make for a festive presentation but who wants all that extra fat and calories? There is a super easy way to make crispy tortilla bowls at home in your own oven. It takes only minutes and you can have a healthy, festive yet delicious way to serve up all kinds of incredibly fun food! I love this so much.
The idea for the baked crispy tortilla bowls came from my new favorite plant based cookbook The Prevent and Reverse Heart Disease Cookbook. The set of 4 baking pans can be found at Bed Bath & Beyond for just $7.99 . What a bargain kitchen gadget!
It doesn’t get any easier than this. Heat the tortillas up for 20 seconds in your microwave to soften them before placing them in the baking pan – the instructions don’t tell you to do this but I found that it works better if they are warm and more pliable. Place in a preheated 350 degree oven and bake for 7-10 minutes until they reach the desired amount of “crispy.”
I used whole wheat tortillas and one corn tortilla, baked them for 10 minutes – they were nice and crispy! I set out the fixings for taco salads and let everyone build their own salad. Shredded romaine lettuce, corn, Matt’s Sofrito Black Beans, salsa, brown rice, cilantro, green onions, avocado and mango cilantro salsa. It was delicious and we enjoyed eating the crispy the bowl as well. Ann and Jame Esselstyn the co authors of the cookbook like to use these bowls for chili, lentil sloppy Joe’s as well as any hardy salad. Great ideas!
My favorite re-fried beans recipe is Matt’s Sofrito Beans which comes from this cookbook. I just saw the cookbook at Sam’s Club for $15.99 – it’s a bargain! We have loved every recipe I have made from it. The recipes are quick, easy and big on flavor. You don’t have to follow a plant based diet to enjoy the recipes. I think everyone will find something in this cookbook that they will like! Healthy food is anything but boring – trust me we like tasty food around here and it has to meet our high standards to show up on the menu again.
Nutmeg Notes
Have you noticed that the stores are already filled with Christmas decorations? I was looking for fall items and in a couple of stores they have already moved on to Christmas stuff and there were no fall items to be found! That’s just crazy. We don’t even get to enjoy the current season because retailers are shoving the next holiday at us. Okay – that’s a pet peeve of mine.
On a more happy note – it is starting to feel like fall around here. My morning walks are much cooler and I start out with a jacket but it does get shed about midway. I try to take advantage of walking outdoors every day and soak up the fresh air and the sunshine!
The Goats in the neighborhood program is back! There is a herd of goats that the city moves around from field to field to keep the wild grass under control. Right now they are all along the nature trail that I walk on in the mornings. I love seeing them every morning.
They don’t make very much noise but recently I have a witnessed a couple of males fighting. I can’t help but stop and watch them for a little bit. Lots of people stop and take photos – they are a big hit and I will miss them when they move on.
This giant displays of pumpkins at my Whole Foods make me smile.

You can also take the tortillas and ‘drape’ them over the wires in the oven racks to make more of a taco shell, too. Versatile things.
I hate that there is Christmas stuff out before Halloween! Let the holiday happen already without crowding it out. Sheesh!

That’s a great idea Lori! I will have to try it. I do make my own chips sometimes with corn tortillas and they turn out so good – it’s a good way to have portion control!
