I’m also sharing a recipe for Tofu Burgers. I can already see some of you turning up your noses at the thought of a tofu burger but you have to give them a try! I had my first tofu burger when we were on vacation earlier this summer and both hubby Tom and I thought they were fantastic. When we got home I set out to find a recipe so we could put them on our menu.
Β When I did a Google search I found two recipes that looked promising, one on 101 Cookbooks and a veganized version of that same recipe on Carrie OnVegan. It only needed a little more tweaking to make it more like the burger we had on vacation. It is indeed delish!
I used this tofu that I get at Whole Foods market. I also like the tofu from Trader Joe’s.
With some recipes using tofu you need to press out the extra water in the tofu before cooking with it. You can do this by placing the tofu on a plate lined with paper towels, placing more paper towels on top of the tofu and then placing something heavy on top of the tofu like a large pot or a cast iron frying pan. Then you need to change out the paper towels and replace them with dry ones. This method works really well Β but it does use up a lot of paper towels. After going through the hassle of that a few times I purchased a Tofu Xpress from Amazon.
The TofuXpress is super easy to use and with its spring loaded press it does a great job of pressing out the extra liquid. I love it! If you are going to use tofu on a regular basis it’s worth the money to get the press and make this step hassle free.
This is how I served the tofu burgers. I cut the patties in half so they would fit in half a whole wheat pita pocket Β spread with a little mustard, some fresh spinach and onions and mushrooms that I sauteed in a little bit of water. Scrumptious!
Tofu Burgers
- 1 pound extra firm tofu, pressed and crumbled
- 2 tablespoons ground flax seeds mixed with 6 tablespoons water let sit for 5 minutes
- 1/2 cup old fashioned oats
- 1/2 cup raw cashews
- 1/2 cup raw sunflower seeds
- 1/2 cup mushrooms, sliced
- 1/2 cup onions, chopped
- 1/2 cup carrots, shredded
- 1 tablespoon Dijon mustard
- 1 tablespoon reduced sodium soy sauce
- 2 teaspoons ground cumin
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon salt
Place all ingredients in the work bowl of a food processor and process until smooth. Divide mixture evenly into 8 patties. Heat up a non stick skillet and spray it with some oil, cook the tofu burgers 5-6 minutes, turn over and cook another 5-6 minutes.
Yield: 8 burgers

Where did summer go?
Can you believe it’s nearly the end of summer? Boo-hoo to that. I like fall and autumn though so, some cooler crisp days will be nice for a change. I had to wear a light jacket on my morning walk today as it was a bit breezy. The air smelled faintly of smoke this morning. We live in the valley here in Northern CA and the smoke from the fires near Yosemite and Lake Tahoe drift this way. I feel for those fire fighters – what a job that is.
Hubby Tom and I had date night one night this week and went to seeΒ Lee Daniels The Butler and it was a great movie! I like going to movies during the week when it’s not so crowded and since we went before 6:00 it was still matinee price. Love that!
It’s almost Labor Day weekend. We don’t have big plans – just puttering around home – there is plenty to keep us busy here.

The tofu burgers sound great.
I haven’t seen a movie in the theater in many years, but we promised the kid to take him to the movies soon (he has never been). No big Labor Day plans, and I like it that way. π

Andrea we watch a lot of movies at home but once in a while it’s a treat to go to the theatre! Oh yes, it’s time to take the “kid” to see a movie – he will be amazed at the size of the movie screen. π I hope you get to enjoy a relaxing weekend with your family. π

I love tofu from Trader Joe’s, too, they are pretty good. What a great idea – pita sandwich filled with yummy nutty & savory tofu burgers (looks like a perfect shape!) and muy muy scrumptious! I nearly forgot about Labor Day weekend, I don’t think we will be celebrating one here in Spain. I watched The Frozen Ground starring Nicolas Cage & John Cusack and based on a true story, based on criminal Robert Hansen.

Those burgers look yummy! I too have not made tofu burgers yet. I am celebrating Labor Day by working!. I always look forward to Labor Day because it gently ushers in the best weather in Northern California….September and October are my favorite months here.
