Substitutions & Variations

Smoked Paprika → Regular paprika works, but you’ll lose the smoky flavor—try a drop of liquid smoke if you have it.

Coconut Aminos → Swap with low-sodium soy sauce or tamari (for gluten-free).

Balsamic Vinegar → Apple cider vinegar or red wine vinegar will work, though balsamic gives the richest flavor.

Maple Syrup → Date syrup.

Chipotle Chili Powder → Use regular chili powder for a milder bite, or a little cayenne pepper for more heat.

Sweet & Smoky Tofu Bites

Ingredients Method Notes

Ingredients
  

  • 1 brick 14–16 oz firm tofu
  • 1/4 cup coconut aminos or low-sodium soy sauce/tamari
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon chipotle chili powder

Method
 

  1. Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper.
  2. Cut tofu into bite-sized cubes, squares, triangles or strips.
  3. In a small bowl, or jar, whisk together the coconut aminos, balsamic vinegar, maple syrup, onion powder, garlic powder, smoked paprika, and chipotle chili powder.
  4. Arrange tofu cubes evenly on the baking sheet. Pour about half the marinade over the tofu.
  5. Bake for 25–30 minutes, turning halfway through and brushing with additional marinade if desired, until the tofu is browned and slightly crisp on the edges.
  6. Serve warm or chilled. Store leftovers in the refrigerator for up to 5 days.

Notes

When making these for the grandchildren I leave out the smoked paprika and chipotle chili powder.
