Easy Delicious Vegan Brunch

You can easily make this delicious, healthy, gluten free, oil free, vegan brunch. Serve a crowd or make it for yourself, and enjoy leftovers, all week long. Either way, you and any guests, will be well fed. These are some of our favorite recipes. Breakfast and brunch recipes can be enjoyed any time of day.

Tofu Scramble, Breakfast Sausages, Oat Pancakes, steamed asparagus, fresh fruit, Breakfast Potatoes, and Easy Blueberry Sauce. Make a pot of tea, and enjoy the company of family and friends, while you feast on this amazing brunch.

This makes a nice plate of food for breakfast, brunch, lunch or dinner. Breakfast type foods are good anytime of day.

Sheet Pan Tofu Scramble is easy to make and the addition of beans makes it even more filling and flavorful. Serve over a bed of steamed greens for a real treat.

These Breakfast Sausages are incredibly flavorful and have a wonderful texture. They freeze well too so you can make them in advance and heat them up.

Sheet Pan Breakfast Potatoes are oil free and so simple to make. The red onion and bell pepper add a nice flavor and color. I like to make them with gold potatoes as they have a natural buttery flavor. These are a big hit, so make extra. I use the Vidalia Chop Wizard to get evenly diced potatoes and peppers.

Banana Oat Pancakes are fun to have, especially, if you are feeding young children. They can be topped with nut butters, jam, or syrup. This is my gluten free Sheet Pan Pancake recipe but made on the stove top instead of the oven. Go ahead and make a double batch so you have some leftover to put in the freezer.

    I want to THANK YOU so much for how you distinguish the difference between Tablespoon & teaspoon. I am shocked at all the people who list their recipes as tablespoon & teaspoon (too similar). Hardly anyone capitalizes the Tablespoon!
