Pancakes are easy to make, delicious and most everyone loves them. Made from simple ingredients, like rolled oats, plant milk, ripe banana, date sugar, vanilla, cinnamon and nutmeg. These are simply lovely. Packed with whole grain goodness, fiber and protein. Did I mention how easy they are to make?
I usually make a double batch and freeze some for future meals. Shown here with topped with Breakfast Sausages and Date Lady date syrup drizzled over the top.

Pancakes are so easy to make in the Vitamix high powered blender. I use the A3500 Vitamix blender. Make a double batch and freeze some for future meals. You can reheat them in the toaster oven or microwave. If you want to save time, you can make this same recipe as Sheet Pan Pancakes – it’s quick and easy and you don’t have to stand at the stove to flip pancakes. The perfect solution for busy people.

Vegan Banana Oat Pancakes – Vitamix
Equipment
- Vitamix Blender
Ingredients
- 2 3/4 cups rolled Oats
- 2 cups plant Milk
- 1 tbsp apple cider vinegar
- 1 banana, very ripe peeled
- 1/4 cup date powder or date sugar, optional
- 2 tsp vanilla extract or 1 tsp vanilla powder
- 1 1/2 tbsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp freshly grated nutmeg
Garnishes
- Fresh or dried fruit, chocolate chips, raisins nuts or coconut, maple syrup, date syrup or blueberry sauce.
Instructions
- Pour vinegar into the plant milk, stir and set aside.
- In blender container blend rolled oats into a flour, empty into a bowl and set aside.
- Add the plant milk mixture and the banana to the blender container, add the oat flour and the rest of the dry ingredients. Blend until well combined.
- Preheat a non stick pan or pancake griddle on medium heat. Pour approximately 1/4 cup of batter for each pancake.
- Cook until the edges of the pancake start to look a little dry and the rest of the batter bubbles a little. Flip over and cook another 2-3 minutes. Remove to a warm plate and continue process with the rest of the batter.
- Top with fresh fruit like berries, or bananas, or dried fruit, maple syrup, date syrup or my Easy Blueberry Sauce.

Tami, have you ever adapted this recipe for pancakes? I think pumpkin pancakes with applesauce would be fantastic, and I’m thinking of experimenting, combining your oat flour pancake recipe with some additions from this recipe. Any tips?

I haven’t tried the pumpkin oat waffle recipe as pancakes but i think it would work. I would add some baking powder to the recipe to help them fluff up a bit. Maybe a tablespoon baking powder and add more plant milk to thin the batter for pancakes. Let me know how it turns out!
