A Relaxed and Delicious Vegan Whole Food Plant-Based Brunch perfect for Mother’s Day or Father’s Day, Easter and Christmas Morning. A fun way to wake up over night guests or to treat your family to a special start to their birthday or any day, just because you love them!
There’s something about brunch that just feels special — a slower start to the day, a beautiful spread of comforting foods, and the easy laughter of friends and family gathered around. Hosting a vegan whole food plant-based brunch is one of my favorite ways to entertain. It’s relaxed, flexible, and filled with vibrant, satisfying dishes that everyone can enjoy — whether they’re plant-based eaters or not.

Using some of my favorite brunch recipes (which I’ll link to at the bottom of this post), you can easily create a delicious and nourishing spread that feels celebratory, without being stressful. Here’s how you can put together a fabulous brunch buffet, that will have everyone coming back for seconds (and maybe even thirds!).

Easy Sheet Pan Recipes
Start by choosing a couple of easy sheet pan recipes to anchor your brunch. Sheet pan pancakes are a game changer — no flipping required! Just pour the batter onto a baking sheet, bake, and cut into squares. You can even make different sections with blueberries, chocolate chips, or bananas to suit everyone’s taste.
Another crowd-pleaser is a big sheet pan tofu scramble. Loaded with colorful veggies and seasoned perfectly, it’s hearty and satisfying. You could also add a batch of sheet pan breakfast potatoes, roasted to crispy perfection with your favorite herbs and spices.
Waffles, Pancakes, and More
If you’re looking for something a little more classic, waffles are always a hit. Try a batch of my regular waffles or go for something seasonal like pumpkin waffles — they’re lightly spiced and wonderfully cozy.
Prefer pancakes cooked the traditional way? Stovetop pancakes never go out of style, and they can be made ahead and kept warm in the oven until serving time. If you have a ceramic griddle you make a lot of pancakes at one time.
This is the one I have and I love it. I can make a large amount of pancakes quickly. I don't use any oil and nothing sticks.

Sweet Treats
No brunch is complete without a little something sweet! Baked oatmeal is not only easy to make ahead but also endlessly customizable. Add fresh or dried fruits, nuts, and a hint of cinnamon for a cozy, comforting dish.
Muffins are another great make-ahead option — think banana, apple cinnamon, or even pumpkin spice. Serve muffins, pancakes or waffles with a dollop of homemade blueberry sauce for a beautiful and tasty topping.

Savory Additions
To round out the savory side of your brunch, consider making vegan breakfast sausages. They’re flavorful, satisfying, and great alongside tofu scramble and potatoes. Guests love having a hearty option like this, and they can be made ahead and warmed just before serving.

Fresh and Vibrant Options
Balance the heartier dishes with something fresh. A green smoothie station can be a fun interactive addition — set out a few small glasses of pre-made smoothies, or have a blender and bowls of greens, fruits, and add-ins ready so guests can customize their own.

Steam, grill or air fry a green vegetables like asparagus, Brussels Sprouts or broccoli. Give it a squeeze of fresh lemon juice before serving and some freshly ground black pepper.

And of course, don’t forget a big platter of fresh fruit. It adds beautiful color to your table and offers a light, refreshing option.
Setting Up Your Brunch Buffet
Creating a beautiful brunch buffet is easy and inviting. Arrange your dishes at different heights using cake stands, trays, and bowls. Keep plates, napkins, and cutlery at the start of the table so guests can help themselves easily.
Label each dish with a little card if you like — especially helpful if you have a variety of toppings and sauces available. Add a vase of fresh flowers or a few candles for a simple but festive touch.
Beverages
Set up a beverages station which might include infused water using slices of cucumber, limes and fresh mint. A pot of coffee, with non dairy creamer, hot water for tea and fresh juice.

The best part of hosting a vegan whole food plant-based brunch is that once everything is set up, you can relax and enjoy the time with your family and friends. Everything is casual, abundant, and full of delicious options — the perfect atmosphere for a laid-back, memorable gathering.
